Main Ingredients- 8 small potatoes (baby potatoes)
- 2 small cans of Spam
- 1 stalk of green onion
- 2 Korean green chili peppers
- 1 onion
Sauce Ingredients- 1 Tbsp Gochujang (Korean red chili paste)
- 1/2 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp Sugar
- 5 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 5 Tbsp Gochugaru (Korean red chili flakes)
- 1 Tbsp Mirin (rice wine)
- 1/2 tsp Black Pepper
- 1 Tbsp Gochujang (Korean red chili paste)
- 1/2 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp Sugar
- 5 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 5 Tbsp Gochugaru (Korean red chili flakes)
- 1 Tbsp Mirin (rice wine)
- 1/2 tsp Black Pepper
Cooking Instructions
Step 1
First, prepare 8 baby potatoes. Peel them cleanly using a potato peeler or a vegetable peeler. Rinse them under running water and pat dry. Cut the prepared potatoes into thick pieces so they don’t fall apart during cooking. (About 1.5-2 cm thick recommended).
Step 2
Next, prepare the vegetables. Roughly chop or dice 1 onion. Slice 1 green onion diagonally. Remove the seeds from 2 Korean green chili peppers and chop them finely to add a spicy kick.
Step 3
Let’s make the flavorful sauce. In a bowl, combine 1 Tbsp Gochujang, 1/2 Tbsp Doenjang, 1 Tbsp Sugar, 5 Tbsp Soy Sauce, 1 Tbsp Minced Garlic, 5 Tbsp Gochugaru, 1 Tbsp Mirin, and 1/2 tsp Black Pepper. Mix thoroughly until the sauce is well combined. This sauce is key to the savory depth of the potato stew, so mix it diligently.
Step 4
Prepare the Spam for texture. Take the contents out of the 2 small cans of Spam. Use the back of a knife or place the Spam in a plastic bag and mash it coarsely with a rolling pin or your hands. It’s better to leave some chunks for a pleasant bite rather than mashing it too finely.
Step 5
Now it’s time to assemble all the ingredients in one pot. Place the thickly sliced potatoes at the bottom. Spread the sliced onion and mashed Spam evenly over the potatoes. Drizzle the prepared sauce generously on top, and finally, arrange the sliced green onions and chopped chili peppers aesthetically. Add 4 cups (approx. 800ml) of water for the delicious stew.
Step 6
Now, cover the pot with a lid and start boiling over high heat. Maintain high heat until the water comes to a rolling boil. Once it starts boiling vigorously, reduce the heat to medium.
Step 7
After reducing the heat to medium, remove the lid and stir everything together to ensure the ingredients are well combined. Then, cover the pot again and let it simmer until the potatoes are tender and cooked through. You can check if the potatoes are done by piercing them with a chopstick. If they are soft, it’s ready. If the stew becomes too thick while simmering, add a little water.
Step 8
Serve the delicious potato stew generously in a bowl and enjoy with a warm bowl of rice! It’s incredibly delicious mixed with rice.
