Main Ingredients- 500g Beef for Bulgogi
- 1 Onion
- 4 Shiitake mushrooms
- A small bunch of Oyster mushrooms
- 1 bundle of Enoki mushrooms
- A handful of Bok Choy
- 1 Green onion
Bulgogi Marinade- 4 Tbsp Sugar
- 2 Tbsp Minced garlic
- 4 Tbsp Fish sauce (e.g., anchovy or sand lance)
- 1 Tbsp Sesame oil
- 1/2 Onion
- 1/4 bunch Green onion (about 1/4 stalk)
Broth for Hot Pot- 1 Tbsp Minced garlic
- 1 Tbsp Sugar
- 2 Tbsp Soy sauce
- 400ml Water (approx. 2 Korean soup bowls)
- A splash of Sesame oil
- 4 Tbsp Sugar

Cooking Instructions
Step 1
Feel free to prepare the vegetables and mushrooms for the hot pot according to your preferences! The recipe shown uses shiitake mushrooms, oyster mushrooms, enoki mushrooms, bok choy, and green onions. Trim the tough ends of the mushrooms and chop them into bite-sized pieces. Slice the vegetables accordingly.
Step 2
Gently press the bulgogi beef with paper towels to remove any excess blood. This step is crucial for a clean and delicious flavor, free from any gamey taste.
Step 3
Once the blood is removed, place the beef in a bowl. Use kitchen shears to cut the beef into large, manageable pieces (about 2-3 inches). This method is convenient as it avoids dirtying a cutting board. After cutting, sprinkle 4 tablespoons of sugar over the beef and gently mix it in. If you prefer using honey, acacia honey is recommended for its delicate flavor.
Step 4
To the sugar-marinated beef, add 2 tablespoons of minced garlic and 4 tablespoons of fish sauce. Mix well again, ensuring the marinade is evenly distributed. Add the finely chopped green onions (about 1/4 bunch) and mix lightly. This forms the base marinade.
Step 5
Finally, add the thinly sliced half onion and 1 tablespoon of sesame oil. Mix gently one last time. If you were stir-frying, this would be the point where you’d cook it for delicious bulgogi. However, since we’re making a hot pot, we’ll proceed to the next step. This marinated beef will go directly into the hot pot.
Step 6
Now, let’s prepare the broth that will give our bulgogi hot pot its rich flavor. In a pot, combine 1 tablespoon of minced garlic, 1 tablespoon of sugar, and 2 tablespoons of soy sauce. Pour in about 400ml of water (approximately 2 Korean soup bowls). Finish with a splash of sesame oil and stir well. A simple yet flavorful broth is ready!
Step 7
Arrange the prepared vegetables and mushrooms attractively around the edges of your hot pot. A colorful arrangement will make the dish look even more appealing.
Step 8
Place the marinated bulgogi beef in the center of the pot, nestled amongst the vegetables. Even with just the vegetables arranged, it already looks quite inviting, doesn’t it?

Pour the prepared broth carefully into the hot pot, ensuring it covers the ingredients. (Tip: I accidentally forgot to add the minced garlic and sugar to the broth and added them separately after pouring! Make sure to mix them into the broth beforehand.)
Step 10
If you’d like to add glass noodles (dangmyeon), soak them in cold water for about 1 hour beforehand. The picture shows a small amount, but feel free to adjust the quantity to your liking. Drain the soaked noodles before adding them to the hot pot.
Step 11
All the ingredients are now ready! Once the broth begins to boil, reduce the heat to medium-low and let it simmer until all the ingredients are cooked through and tender. Your delicious, warm Bulgogi Hot Pot is complete! It’s perfect for a hearty meal with rice, or as a fantastic pairing with soju. It’s also a wonderful dish to serve to guests.
