Main Ingredients

  • 3 Potatoes (medium-sized)
  • 1/3 Carrot
  • 1/2 Onion

Cooking Instructions

Step 1

Use about 2 to 3 potatoes, depending on their size. You can add or omit onions and carrots according to your preference.

Step 1

Step 2

Peel the potatoes and cut them into bite-sized cubes. Soak the cut potatoes in cold water for about 10 minutes. This step is crucial as it removes the starchy taste characteristic of potatoes and prevents them from sticking to the pan due to the starch. This is a key tip for Baek Jong-won’s braised potato recipe!

Step 2

Step 3

I’m also adding carrots and onions. Cut the carrots and onions to a similar size as the potatoes.

Step 3

Step 4

Heat about 1 tablespoon of oil in a deep pan or pot. Add the harder carrots first and sauté them for about 1 minute until their color becomes vibrant. Then, add the potatoes and stir-fry until the edges of the potatoes begin to look translucent. When cooking potatoes, a non-stick or coated pan is recommended over stainless steel for better usability as it prevents sticking.

Step 4

Step 5

Once the potatoes start to look translucent, add the onions and stir-fry them. After the onions are slightly softened, pour in about one cup of water (using a paper cup as a measure). Add the measured soy sauce, sugar, mirin, and oligosaccharide, and bring to a simmer to let it reduce.

Step 5

Step 6

Cover the pan and reduce the heat to medium-low. Let it simmer until the sauce is absorbed by the potatoes and vegetables. Baek Jong-won’s braised potato recipe is great because it’s not difficult and anyone can easily follow along.

Step 6

Step 7

When the potatoes are cooked and the sauce has thickened to a glaze, turn off the heat. Add the chopped chives and sesame seeds, gently stir once, and serve on a plate.
