Spicy & Sweet Sauce

  • Gochujang (Korean chili paste), 1 Tbsp
  • Gochugaru (Korean chili flakes), 1 Tbsp
  • Sesame oil, 1 Tbsp
  • Baek Jong-won’s All-purpose Soy Sauce, 1 Tbsp (or 1/2 Tbsp regular soy sauce + 1/2 Tbsp sugar if unavailable)
  • Sugar, 1 Tbsp
  • Sesame seeds, 1/2 Tbsp

Cooking Instructions

1. Prepare Ingredients: First, wash and prepare all the ingredients for your Bibim Guksu: somen noodles for 2 servings (about 200g), kimchi, cucumber, crown daisy, and carrot. Kimchi that is well-fermented and slightly sour will enhance the flavor of the noodles.

2. Slice the Kimchi: Finely julienne the prepared kimchi into bite-sized pieces. Cutting it too thick can make it difficult to eat, so thin slices are recommended.

3. Boil and Prepare Eggs: Hard-boil the 2 eggs. Place them in a pot with plenty of water and boil for about 10 minutes. Immediately transfer them to cold water to cool down. Once completely cooled, carefully peel the shells. Hard-boiled eggs make a great topping, adding visual appeal and flavor.

4. Julienne Garnish Vegetables: Thinly julienne the cucumber and carrot for the toppings. Cut the crown daisy into similar lengths. Colorful vegetables will make your Bibim Guksu look more appetizing and add a delightful crunch.

5. Make the All-purpose Sauce: In a small bowl, combine 1 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp sesame oil, 1 Tbsp Baek Jong-won’s All-purpose Soy Sauce (or substitute as noted), and 1 Tbsp sugar. Mix well. If you don’t have the all-purpose soy sauce, you can use 1/2 Tbsp regular soy sauce mixed with 1/2 Tbsp sugar. Finally, add 1/2 Tbsp sesame seeds and mix everything together to complete the sauce.

6. Boil and Rinse Somen Noodles: Bring a large pot of water to a rolling boil. Add the 2 servings of somen noodles and cook for about 5 minutes, or until al dente. Drain the noodles and immediately rinse them under cold running water to make them firm and springy. Rinsing in cold water prevents the noodles from becoming mushy and ensures a chewy texture. Drain thoroughly in a colander.

7. Combine Kimchi and Noodles: In a large mixing bowl, place the sliced kimchi first. Add the drained somen noodles on top. Then, generously drizzle the prepared sauce over the noodles and kimchi.
