  • 1/2 cup coarse gochugaru (Korean chili flakes)

  • 1 cup soy sauce (warning: very salty, use half and adjust later!)
  • 1/2 cup brown sugar

First, prepare all your ingredients. Wash and chop the vegetables into bite-sized pieces. Ensure the chicken is clean and ready for cooking.

In a pot, add 600ml of water and place the chicken in it. Bring it to a boil. This step helps to remove any gamey odor from the chicken and create a flavorful base.

Once the water begins to boil, add the brown sugar first. Adding sugar early allows it to penetrate the chicken, infusing it with sweetness for a richer flavor.

As the mixture comes to a rolling boil again, add the potatoes, carrots, and onions. These vegetables will cook alongside the chicken, adding their natural sweetness and texture to the stew.
