Salmon Sashimi Ingredients

  • 1kg Fresh Salmon
  • 1 Onion
  • 1 bunch Chives (or Green Onions)
  • Several Perilla Leaves (Kkaennip)
  • Minced Garlic (for serving)
  • 1 Lemon
  • 1 Yellow Bell Pepper
  • 1 Red Bell Pepper
  • 1 Orange Bell Pepper

Baek Jong-won Style Chogochujang Sauce Ingredients

  • 3 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Vinegar
  • 1 Tbsp Sugar
  • 1 Tbsp Cider (or Sprite/7-Up for consistency)
  • 1/2 tsp Minced Garlic
  • 1/4 tsp Mustard (prepared, adjust to taste)
  • Pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

First, prepare your fresh vegetables to accompany the salmon sashimi. For a visually appealing presentation, select a variety of colorful vegetables: white (onion), green (chives, perilla leaves), and red/yellow/orange (bell peppers). Slice the onion thinly. Wash and cut the chives into appropriate lengths. Wash and thinly slice the bell peppers after removing the seeds.

Step 1

Step 2

Now, let’s make the star of the show: the chogochujang sauce, inspired by Baek Jong-won! In a bowl, combine 3 tablespoons of gochujang, 1 tablespoon of vinegar, and 1 tablespoon of sugar. This base ratio creates a perfect flavor balance. Add 1/2 teaspoon of minced garlic for aroma and 1/4 teaspoon of prepared mustard for a subtle kick. Mix everything well. If the sauce is too thick, gradually add a little cider (or a clear soda like Sprite/7-Up) until you reach your desired smooth consistency. The cider adds a touch of sweetness and effervescence.

Step 2

Step 3

Voila! Your delicious chogochujang is ready. It’s incredibly easy to make and will make your homemade salmon sashimi taste like it’s from a top restaurant.

Step 3

Step 4

Next, let’s prepare a refreshing chilled soup, perfect for a special meal. While you’re preparing the salmon, have your chilled soup broth ready in the freezer so it can start to form a slushy ice consistency.

Step 4

Step 5

Just before serving, beautifully arrange your prepared salmon and vegetables on a platter. Then, pour the icy broth over them to create a wonderfully cold and invigorating soup.

Step 5

Step 6

This chilled soup, made with leftover vegetable scraps, is wonderfully refreshing with its sweet and tangy flavor. It’s a great way to use up ingredients and add another delicious dimension to your meal.

Step 6

Step 7

Now, let’s focus on the main event: the thick, fresh salmon sashimi. The glistening slices of salmon are incredibly appetizing.

Step 7

Step 8

The price of salmon sashimi has increased recently, about $2 per pound. As a salmon lover, I certainly feel the impact of rising prices! Fortunately, the salmon I bought was very fresh, with 10 days remaining on its expiration date. Freshness is key to the taste and quality of sashimi.

Step 8

Step 9

Wow, look at all this rich salmon belly! My husband has a golden touch for picking out the most flavorful and tender parts. It’s amazing how he knew to get so much of the wonderfully fatty belly, which is often hidden!

Step 9

Step 10

The beautiful presentation is my contribution, while my husband, with his expert knife skills, handles the delicate art of slicing the sashimi. Our teamwork ensures a perfect salmon experience.

Step 10

Step 11

My husband carefully slices each piece of salmon with precision. These thinly sliced pieces are sure to melt in your mouth.

Step 11

Step 12

Forget the drama ‘Something in the Rain’; here we have ‘Brother with Steel Arms who buys and slices delicious salmon sashimi’! Thanks to my capable husband, we can indulge in plenty of fantastic salmon.

Step 12

Step 13

For those who want to savor the pure taste of salmon, try a small dab of wasabi and dip it lightly in soy sauce. The sharp kick of wasabi and the salty soy sauce enhance the salmon’s natural flavor.

Step 13

Step 14

If the rich, buttery texture of salmon feels a bit too decadent, our homemade chogochujang is the perfect counterpoint. Its spicy and tangy notes cut through the richness, providing a cleaner taste.

Step 14

Step 15

We’ll also pair it with the refreshing chilled soup we prepared earlier. The crispness of the soup cleanses the palate and complements the salmon beautifully. (Remember, we used all the leftover vegetable scraps for this soup!)

Step 15

Step 16

Voilà! The salmon, once on a cutting board, has transformed into an artful dish on a plate. It looks as good as it tastes!

Step 16

Step 17

Let the delicious salmon party begin! With all the sashimi, fresh vegetables, and flavorful sauces, we’re ready for a feast.

Step 17

Step 18

Especially this thick salmon belly! It’s the ultimate in tenderness and rich flavor. I wish I could be as welcomed as salmon belly! (laughs)

Step 18

Step 19

Dip a piece of this rich, tender salmon into our special chogochujang. The spicy and sweet sauce elevates the salmon’s flavor profile.

Step 19

Step 20

For an alternative taste, try dipping it in soy sauce with a touch of wasabi. This allows you to appreciate the salmon’s inherent flavor more delicately.

Step 20

Step 21

The thick salmon loin also offers a delightful chewy texture and rich taste as you chew. It provides a different yet equally delicious experience compared to the belly.

Step 21

Step 22

Making a salmon sashimi bowl by mixing it with plenty of vegetables and chogochujang is another fantastic option. The crispness of the fresh vegetables combined with the tender salmon creates a delightful medley of textures and flavors.

Step 22

Step 23

With salmon this delicious, it simply disappears! We highly recommend you try this special homemade salmon sashimi feast!
