Spicy and Hearty Baek Jong-won’s Golden Recipe for Budae-jjigae
Perfect for when the days and nights are getting cooler! This is a recipe for Budae-jjigae that’s perfect for making at home. It’s also great for enjoying with children. The harmonious blend of spicy and sweet flavors is exquisite, and the generous ingredients with a rich broth are simply outstanding.
Main Ingredients- Spam (2 cans, approx. 400g)
- Firm Tofu (1 block, approx. 300g)
- Vienna Sausages (1 handful, approx. 100g)
- Onion (1 medium)
- Green Onion (1 stalk)
- Beef Bone Broth (Gomtang) Base (2 pouches, 350g each)
- Well-fermented Kimchi (1/2 bowl, approx. 150g)
- Enoki Mushrooms (1 pack)
Cooking Instructions
Step 1
First, prepare all your ingredients. Wash and trim the vegetables, and slice the ham and sausages into bite-sized pieces.
Step 2
Slice the Spam and Vienna sausages into approximately 1cm thick pieces. Slice the onion thinly or chop it coarsely. Cut the green onion diagonally.
Step 3
Cut the tofu into large cubes. If cut too small, it may crumble while cooking.
Step 4
Trim the base of the enoki mushrooms and separate them into strands. Arrange all the prepared ingredients attractively in a pot. Distribute the ham, sausages, tofu, and vegetables evenly for a visually appealing dish.

Add the baked beans, which add a delightful flavor to the Budae-jjigae. Baked beans contribute a sweet and savory taste that deepens the flavor. They are easily found in supermarkets, and about 4 tablespoons (approx. 100g) is sufficient.

Now, let’s make the essential seasoning paste for Budae-jjigae! In a wide bowl, combine 1 Tbsp Gochujang, 2 Tbsp Gochugaru, 3 Tbsp Soy Sauce, 1 Tbsp Sugar, 1 Tbsp Minced Garlic, 1 Tbsp Soju, and a pinch of black pepper. Mix well to create the seasoning paste.
Step 7
Slice the well-fermented kimchi into bite-sized pieces. About half a bowl (approx. 150g) is a good amount.

Add the prepared seasoning paste and sliced kimchi to the pot with the ingredients. Pour in the two pouches of beef bone broth base (350g each). The rich and deep broth will further enhance the flavor of your Budae-jjigae.

All ingredients, broth, and seasoning are ready! Now, place the pot on the stove and bring it to a boil over high heat. Once it starts bubbling, reduce the heat to medium-low and simmer for another 5-10 minutes to allow the flavors to meld into the ingredients.
