Ingredients

  • 100g Kimchi (fermented/sour kimchi preferred)
  • 1 serving Rice
  • 2 Tbsp Cooking oil
  • 1 stalk Green onion
  • 1 Egg
  • 1 Tbsp Soy sauce
  • 1 Tbsp Gochugaru (Korean red chili powder)
  • 0.5 Tbsp Sesame oil
  • 2 Tbsp Mozzarella cheese
  • 2 slices Bacon
  • 0.5 Tbsp Oyster sauce

Cooking Instructions

First, let’s prepare the kimchi for delicious stir-frying. Finely chop 100g of fermented kimchi with scissors or a knife into small pieces, smaller than bite-sized, so it’s easy to eat and mixes well with the rice. If the kimchi pieces are too large, it can affect the texture of the fried rice.

Prepare the bacon (2 slices) and green onion (1 stalk) that will add flavor when stir-fried with the kimchi. Slice the bacon into approximately 1cm pieces, and finely chop the green onion to create aromatic green onion oil. Having all ingredients prepped beforehand makes the cooking process much smoother.

Now, let’s start stir-frying! Heat 2 tablespoons of cooking oil in a pan and add the prepared green onions. Begin to stir-fry over medium heat. This is the process of making ‘green onion oil’ where the sweet aroma of the green onions is released and infused into the oil. Gentle heat control is key!

Once the green onions turn translucent and slightly wilted, add the fermented kimchi and bacon to the pan together. Continue to stir-fry over medium heat, allowing the kimchi and bacon to meld together. The fat rendered from the bacon will add a delicious flavor to the kimchi.

When the kimchi becomes tender and soft from stir-frying, add 1 tablespoon of gochugaru and reduce the heat to low. It’s important to stir continuously after adding the chili powder to prevent it from burning. The kimchi will develop a delicious color as it mixes with the gochugaru.

Here’s Baek Jong Won’s secret for deeper fried rice flavor! Push the stir-fried kimchi and other ingredients to one side of the pan. Pour 1 tablespoon of soy sauce into the empty space. Let the soy sauce bubble and caramelize on the hot pan, then mix it with the kimchi and stir-fry. This adds a savory umami flavor that makes the fried rice much more delicious.

Now it’s time for the star of the fried rice: the rice! Add one full serving of warm rice. Use a spatula to press down and stir-fry thoroughly, ensuring that the rice is evenly coated with the kimchi, bacon, and all other ingredients. It’s important to break up any clumps of rice.

We’re almost done! Lastly, drizzle 0.5 tablespoon of sesame oil for a nutty aroma and stir-fry once more. Taste the fried rice and if it needs more seasoning, add 0.5 tablespoon of oyster sauce. Oyster sauce significantly enhances the umami flavor, elevating the fried rice to the next level.

Let’s add a special touch with a fried egg. Prepare a small frying pan, and shape the fried rice into a mound in the center. In the meantime, whisk one egg. (Mixing 0.5 Tbsp of cooking wine and a pinch of salt into the egg can make a smoother fried egg without any eggy smell.) Pour the egg mixture thinly around the edges of the pan.

For cheese lovers, sprinkle 2 tablespoons of mozzarella cheese over the fried rice. Then, cover the pan with a lid and cook slowly over very low heat. As the cheese melts, it will combine with the fried rice, creating a fantastic visual and taste.
