Baby’s First Rice

Smooth Black Soybean Risotto Gratin (Late-Stage Baby Food)

Baby's First Rice

This special baby food recipe uses formula (or breast milk) instead of cow’s milk, perfect for babies with milk allergies. It’s based on formula milk mixed with finely ground black soybeans, which are rich in protein and iron, creating a smooth texture. The unique flavor of the soybeans is masked by cheese, a great source of calcium essential for your baby’s growth. We’ve also added onions, known to aid digestion, and chicken breast, packed with essential amino acids, allowing your baby to enjoy the distinct textures of each ingredient. Thanks to the subtle sweetness and nutty flavor of black soybeans, babies are likely to embrace this nutritious and delicious late-stage baby food without hesitation.

– Amazing Benefits of Black Soybeans:
Black soybeans are sweeter and nuttier than other beans and are rich in lysine, an amino acid that supports children’s development. They also contain anthocyanins, which are excellent for improving eyesight and providing antioxidant benefits, making them a great food for brain activity in young children.

Black Soybean Formula Mixture

  • Black soybeans 70g
  • Formula milk 1 Tbsp
  • Chicken breast broth 1 Tbsp
  • Water (for consistency, optional) 1~2 tsp

Cooking Instructions

Step 1

First, let’s make the chicken broth! Place the chicken breast and onion piece in a pot, add enough water to cover the chicken breast, and bring to a boil over medium heat. Once boiling, carefully skim off any foam or impurities that rise to the surface. When the chicken breast is fully cooked and the broth has absorbed its flavor, strain it through a sieve to obtain a clear broth.

Step 1

Step 2

Next, we’ll cook the black soybeans and remove their skins. Add black soybeans and enough water to cover them to a pot and boil. As the water evaporates, add a little more water each time to prevent sticking and ensure they cook through, repeating this process about 4 times. Once the beans are cooked, let them cool in cold water. Then, rub them between your palms to easily remove the skins. Prepare only the de-skinned black soybeans.

Step 2

Step 3

Prepare all the ingredients for the baby food according to the recipe. Wash the rice thoroughly. Cook the chicken breast beforehand so it’s ready to use. Finely dice the onion and cut the cheese into appropriate sizes.

Step 3

Step 4

Now, let’s cook the rice. In a rice cooker, combine the washed rice and the chicken breast broth you prepared, in a 1:1 ratio, and cook the rice. Start on high heat, then reduce to medium heat once boiling. When you see holes appearing on the surface of the rice, lower the heat to low and let it steam for 5 minutes until most of the moisture is absorbed. Fluff the rice evenly with a spatula.

Step 4

Step 5

It’s time to blend the black soybean and formula mixture. Place the prepared black soybeans, formula milk, and chicken breast broth into a blender and blend them together until smooth. If your baby dislikes chewy textures, you can add the optional water (1-2 tsp) to the mixture for a smoother consistency.

Step 5

Step 6

Prepare the ingredients for the baby food. Take about 3 tablespoons of the cooked rice, mashing it slightly or leaving some texture. Finely dice the onion and chicken breast into tiny pieces, about 0.5mm, for easy chewing. For the cheese, cut it into thin strips, about 0.3cm thick, to be placed on top of the finished dish.

Step 6

Step 7

Now, let’s sauté the ingredients. Heat 1 tablespoon of water in a pan over low heat and sauté the diced onion and chicken breast. Once the onion becomes translucent, add the blended black soybean mixture and stir everything together as it sautés.

Step 7

Step 8

Let’s adjust the consistency of the baby food. Gradually add the prepared formula milk while stirring, until you reach a thick, porridge-like consistency that’s easy for your baby to eat. If it’s too thick, add more formula; if it’s too thin, simmer it a bit longer to thicken.

Step 8

Step 9

Simmer gently over low heat for a short while to allow the flavors to meld. Once it starts to bubble gently, turn off the heat immediately. Be careful not to overcook it.

Step 9

Step 10

Finally, we’ll lightly bake the finished baby food in the oven. Transfer the baby food into an oven-safe dish and spread it out evenly. Arrange the julienned cheese attractively in a lattice pattern on top. Place it in a preheated oven at 180°C (350°F) for about 30 seconds, just until the cheese melts. Remove from the oven, garnish beautifully, and serve this delicious and nutritious meal to your baby!
