Introducing a nutritious and soft tofu and vegetable pancake recipe that you can confidently serve as your baby’s first side dish. By adding plenty of vegetables your child loves, they can enjoy it deliciously without fussiness.
Main Ingredients- Tofu 100g (approx. 1/4 block)
- Carrot 10g (finely minced)
- Zucchini 10g (finely minced)
- Onion 10g (finely minced)
- Scallion whites 5g (finely minced)
- Egg 1 large
- Pancake mix (or all-purpose flour) 2 Tbsp
- Cooking oil, for pan-frying
Cooking Instructions
Step 1
First, carefully check and prepare all the necessary ingredients. To remove moisture from the tofu, wrap it in paper towels or a clean cloth and microwave for 2 minutes. This will make it firmer and easier to shape. (If microwaving is not an option, you can lightly boil it and squeeze out the water thoroughly.) Once the moisture is removed, place the tofu in a wide bowl and mash it smoothly using a fork or spoon.
Step 2
Finely mince the carrot, zucchini, onion, and scallion whites into pieces small enough for your baby to eat. Add these finely chopped vegetables to the bowl with the mashed tofu. This will add a variety of colors and textures.
Step 3
Add 2 tablespoons of pancake mix to help bind the ingredients. You can also use all-purpose flour or rice flour if preferred.
Step 4
Crack in 1 large egg to add richness and softness. Now, mix all the ingredients thoroughly with a spatula or spoon until well combined and a cohesive batter forms. It’s important to mix until it has a slightly sticky consistency.
Step 5
Heat a non-stick frying pan over medium-low heat and add about 1 tablespoon of cooking oil to coat the surface. Be mindful not to use too much oil, as it can make the pancakes too greasy for your baby.
Step 6
Scoop about a tablespoon of the batter and gently flatten it into small, round patties in the pan. Pan-fry for about 2-3 minutes per side, or until golden brown and cooked through. Flip them carefully to ensure even cooking. These delicious tofu and vegetable pancakes are ready when they are nicely browned on both sides and cooked through. You can also make them bite-sized for easier handling by your baby.
