Main Ingredients- 1/2 medium radish (approx. 500g)

- 2 Tbsp sugar

Cooking Instructions
Step 1
The key to delicious Musaengchae starts with selecting good radishes! Choose fresh and firm ones. Julienne the radish into thin strips about 0.5 cm thick, and thinly slice the scallions. Place the julienned radish in a large bowl.
Step 2
Add 1 Tbsp salt, 1 Tbsp vinegar, and 1 Tbsp sugar to the julienned radish. Gently mix them together and let it sit for about 30 minutes to salt the radish. This process draws out moisture, enhancing its crispiness. Toss it once or twice during this time.
Step 3
After 30 minutes, drain most of the liquid (brine) released by the radish, but leave about 1-2 tablespoons. Now, add all the seasoning ingredients and mix well. Combine 4 Tbsp gochugaru (Korean chili powder), 2 Tbsp minced garlic, 2 Tbsp anchovy sauce, 1/2 Tbsp grated ginger, 1 Tbsp vinegar, and 1 Tbsp sugar. Gently mix with your hands to ensure the seasoning is evenly distributed.
Step 4
