Main Ingredients

  • Pad Thai kit for 2 servings (fresh or dried noodles)
  • 200g beef (thinly sliced for shabu-shabu or flank steak)
  • 1/2 onion (thinly sliced)
  • A handful of cabbage (thinly sliced)
  • 1 handful of chives (cut into 5cm lengths)

For Boiling Beef (Optional, enhances flavor)

  • 1 onion (cut into large pieces for aroma)
  • 6-7 cloves garlic (whole)
  • A pinch of whole peppercorns
  • 1/2 Tbsp doenjang (soybean paste) (to remove beef odor)

Cooking Instructions

Step 1

First, let’s tenderize the beef and remove any gamey odor. In a pot, add water, 1 whole onion, whole garlic cloves, whole peppercorns, and 1/2 Tbsp of doenjang. Bring to a rolling boil. Once boiling, add the prepared beef and simmer for about 10 minutes. Remove the beef from the water. Using thinly sliced cuts like those for shabu-shabu will result in faster cooking and a more tender texture.

Heat a wide pan over medium heat. Add 200ml of water along with the sliced onion and cabbage. Stir-fry for about 1 minute, just enough to soften the vegetables. Be careful not to overcook, as this can make them mushy.

Now, add the rice noodles to the stir-fried vegetables in the pan. Using a store-bought Pad Thai kit with noodles included will make this step very convenient.

Using chopsticks or tongs, gently loosen the rice noodles so they don’t clump together, and mix them with the vegetables. Stir-fry them enough so they don’t stick to the pan.

Add a generous amount of bean sprouts and the boiled beef you prepared earlier. Stir-fry everything together vigorously, like a ‘shake, shake, shake!’ Cook for about 3 minutes, ensuring the bean sprouts remain crisp.

Now it’s time to add the Pad Thai sauce to bring out the flavors! Pour in the Pad Thai sauce and stir-fry quickly for about 30 seconds, ensuring the sauce coats the noodles and vegetables evenly. The amount of store-bought Pad Thai sauce can be adjusted according to your preference. Feel free to add more sauce if you desire a richer flavor.

Finally, add the chives cut into 5cm lengths and give it one last quick stir to finish. The fresh aroma of the chives will enhance the overall flavor of the Pad Thai.
