As summer approaches, it’s time to revitalize your body with a hearty and nourishing Samgyetang! This recipe, featuring fresh ginseng, promises a deeply flavorful broth and tender chicken, perfect for combating fatigue. Let’s prepare a delicious, authentic Korean chicken soup right at home.
Main Ingredients- 1 whole young chicken, cleaned (approx. 900g)
- 2 fresh ginseng roots
- 1 handful of garlic cloves (approx. 10-15 cloves)
- 5 dried jujubes (dates)
- 1 stalk of green onion
- 1 medium onion
Cooking Instructions
Step 1
Begin by thoroughly rinsing the chicken under cold running water. Make sure to clean the inside cavity to remove any residual blood or impurities, ensuring a clean and odorless soup.
Step 2
Gently scrub the fresh ginseng roots with a soft brush to remove all dirt without damaging them. Wash the dried jujubes under running water, and peel the garlic cloves.
Step 3
Place the prepared chicken into a pressure cooker. Add enough water to cover about half of the chicken. Toss in the washed onion, green onion stalk, garlic cloves, and jujubes. Secure the lid of the pressure cooker, bring to high heat, and once the valve starts to whistle, reduce the heat to medium-low and simmer for 10 minutes.
Step 4
After cooking for 10 minutes in the pressure cooker, carefully release the steam and open the lid. Skim off any excess fat that has risen to the surface using a spoon or ladle. With the lid off, continue to simmer over medium heat for another 10 minutes to deepen the flavors of the chicken broth.
Step 5
Now it’s time to add the star ingredient: the fresh ginseng. Place the rinsed ginseng roots into the pot. Cover with a regular pot lid and simmer for an additional 10 minutes. This step allows the fragrant essence of the ginseng to infuse the broth.
