  • Category : Noodles & Dumplings
  • Ingredient Category : Others
  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 2 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Beginner

Main Ingredients

  • Rich beef bone broth 800-900ml
  • Boiled beef brisket 200g
  • Dried rice noodles 120g
  • Fresh bean sprouts, a generous amount
  • 1/4 onion
  • 10 scallions

Cooking Instructions

Step 1

First, wash and peel the 1/4 onion. Then, slice it thinly into shreds. This will add a slightly spicy flavor and a refreshing crunch to your pho.

Step 1

Step 2

Wash the 10 scallions under running water, trim the roots, and finely chop them. These will be used as a garnish, adding color and a fragrant aroma to the finished pho.

Step 2

Step 3

Soak the 120g of dried rice noodles in cold water for about 5 minutes. This brief soaking helps the noodles cook evenly and maintain a pleasant chewy texture without becoming mushy.

Step 3

Step 4

Carefully add the prepared rice noodles to boiling water and cook for approximately 2 minutes. Be careful not to overcook them, as they can become too soft and lose their delightful chewiness.

Step 4

Step 5

Immediately after cooking, rinse the noodles under cold water to remove excess starch. Drain them thoroughly in a colander. This step ensures the noodles are perfectly al dente and enhance the overall texture of the pho. (Tip: You can even use the noodle-cooking water to enhance your broth!)

Step 5

Step 6

Pour 800-900ml of the rich beef bone broth (prepared previously) into a pot. Slice the 200g of tender boiled brisket into bite-sized pieces. (Refer to my previous post for instructions on how to boil the brisket!)

Step 6

Step 7

Once the broth begins to simmer, stir in 2 Tbsp of fish sauce and 1.5 Tbsp of Vietnamese MSG seasoning. This seasoning is key to achieving that authentic umami flavor. (Tip: Taste and adjust the seasoning to your preference. You can add a little more if you desire a stronger taste.)

Step 7

Step 8

After adjusting the broth’s seasoning to your liking, add the prepared brisket slices. Let it simmer briefly just to warm the meat through and allow it to absorb some of the broth’s flavor, then turn off the heat.

Step 8

Step 9

Now it’s time to assemble your pho! Start by placing the soaked and drained rice noodles neatly at the bottom of your serving bowl.

Step 9

Step 10

Generously top the noodles with fresh bean sprouts and the thinly sliced onion. The crisp bean sprouts and onions will add a wonderful contrast to the rich broth and tender meat.

Step 10

Step 11

Finally, arrange the sliced brisket generously over the toppings, and ladle the piping hot broth generously into the bowl, ensuring it covers everything. Allow the hot broth to meld the flavors.

Step 11

Step 12

Garnish with a good amount of the chopped scallions and, if you like, add some sliced red chili for an extra kick and visual appeal. Your delicious homemade pho, complete with plenty of meat, is ready to be enjoyed!
