Ingredients- 600g glutinous rice
- 200g peanuts
- 200g chestnuts
- 380ml water
- 360g brown sugar
- 40g raw sugar
- 1.8 Tbsp soy sauce
- 2/3 Tbsp cinnamon powder
- 2/3 Tbsp salt
- 2 Tbsp sesame oil
- 1/2 Tbsp sesame oil (for greasing the bowl)
- 10 dates
Cooking Instructions
Step 1
Rinse the glutinous rice thoroughly and soak it for at least 4 hours. Drain the soaked rice well.
Step 2
In a bowl, combine the brown sugar, raw sugar, soy sauce, salt, and cinnamon powder. Stir well until the sugars are dissolved, creating a syrup.
Step 3
Wash about one cup of raw peanuts in a colander under running water.
Step 4
Prepare the chestnuts by peeling and cutting them into bite-sized pieces.
Step 5
Place the drained glutinous rice into your Okra or pressure cooker. Layer the peanuts and chestnuts on top. Pour the prepared sugar syrup evenly over the rice and nuts. Drizzle the 2 Tbsp of sesame oil over everything. Add the remaining 1/2 Tbsp of sesame oil to the serving bowl you’ll be using.
Step 6
* **For Okra:** Cook using the ‘Boayang Bap’ (Nutritious Rice) setting for 1 hour and 40 minutes.
* **For Pressure Cooker:** Cook on high heat until the whistle blows, then reduce to medium heat for 1 minute, followed by low heat for 40 seconds. Turn off the heat and let it steam until the pressure is fully released.
Step 7
Once the cooking cycle is complete and the pressure has completely released, carefully open the lid. Gently stir the Yakbap to ensure all ingredients are well combined, being careful not to mash the rice.
Step 8
Lightly grease the serving bowl with the 1/2 Tbsp of sesame oil. Transfer the Yakbap to the prepared bowl and flatten the surface with a spatula.
Step 9
Wash the pitted dates and briefly soak them in water. Drain and then thinly slice them, rolling them up for a decorative garnish.
Step 10
Cut the Yakbap into desired serving portions. For an attractive presentation, you can place it in a transparent plastic wrap and add a golden sticker. This makes for a beautiful and delicious Yakbap!
Step 11
Package the Yakbap in a traditional Korean paper box (hanji box) to transform it into a wonderful gift. It’s perfect for sharing with loved ones.
