- 1 block (approx. 300g) firm tofu

First, prepare the vegetables that will add flavor to your Donggeurangttaeng. You’ll need half an onion (about 75g), 50g of carrot, and 40g of chives. Mince the vegetables as finely as possible for the best texture. Finely chop the onion and carrot, and then finely chop the chives as well.

Removing moisture from the tofu is the secret to delicious Donggeurangttaeng! Take 1 block of tofu, place it in a cheesecloth or clean kitchen towel, and press firmly with your hands to squeeze out as much water as possible. Excess moisture can make the mixture too wet, so this step is crucial.

Now, it’s time to combine all the ingredients. In a large bowl, add the finely minced onion, carrot, and chives. Also add the well-drained tofu. Then, add 570g of ground pork and 1 tablespoon of minced garlic for flavor.
