Ingredients for Soaking Dried Bracken

  • 50g dried bracken
  • 2 liters water

  • 200g boiled bracken
  • 50g minced beef
  • 1/2 Tbsp buckwheat flour (for sautéing beef)
  • 1/2 Tbsp cooking oil (for sautéing)
  • 1 Tbsp perilla oil (for flavor)
  • 1/4 cup water (for sautéing)
  • 1 tsp toasted sesame seeds (garnish)

Bracken Namul Seasoning Ingredients

  • 1 Tbsp soup soy sauce (for initial seasoning)
  • 1 Tbsp chopped green onion (white parts preferred, for initial seasoning)
  • 1 Tbsp perilla oil (for flavor)
  • 1/2 Tbsp minced garlic (for initial seasoning)
  • 1/2 Tbsp ground perilla seeds (for nuttiness)
  • 1/2 Tbsp buckwheat flour (for thickening)

Beef Seasoning Ingredients

  • 1 tsp regular soy sauce (for seasoning)
  • 1 tsp chopped green onion (for seasoning)
  • 1 tsp sesame oil (for aroma)
  • 1/2 tsp minced garlic (for seasoning)

First, place the dried bracken in a clean pot and add 2 liters of cold water. Let it soak for at least 2 to 3 hours. This soaking process will help soften the tough bracken.

Once thoroughly soaked, rinse the bracken multiple times under running water, shaking the pot gently. Then, soak the rinsed bracken in fresh cold water for another 1 to 2 hours to completely remove any bitterness or astringency. This step ensures the bracken has a clean, pleasant taste.

Now, let’s make the Gosari Namul! Bring water to a boil, add 1 tsp of salt and 200g of the prepared boiled bracken. Blanch it quickly for about 30 seconds. Be careful not to over-boil, as it can become too mushy.

Immediately rinse the blanched bracken under cold water to cool it down, then drain thoroughly in a colander. Squeeze out any excess water and cut the bracken into bite-sized pieces.

Time to season the bracken! In a bowl, combine the cut bracken with 1 Tbsp soup soy sauce, 1 Tbsp chopped green onion (white parts mainly), and 1/2 Tbsp minced garlic. Gently mix and massage with your hands, ensuring the seasonings are evenly distributed.

Add 1/2 Tbsp ground perilla seeds, 1 Tbsp perilla oil, and 1/2 Tbsp buckwheat flour to the seasoned bracken.
