Cooking Instructions

Step 1

First, prepare your desired skewer ingredients. I’ve chosen to make rice cake skewers, shrimp and bacon wrapped skewers, chicken and scallion skewers, cherry tomato and bacon wrapped skewers, pineapple skewers, garlic skewers, and mini blood sausage skewers.

Step 2

Cut the fish cakes into bite-sized pieces, about 4 equal sections per piece. This makes them easy to thread onto the skewers.

Step 3

Make several small cuts (about 4-5) across the Vienna sausages. This helps them cook evenly and absorb marinades better, preventing them from bursting.

Step 4

Prepare the rice cakes for skewering. If your rice cakes are hard, soak them in water for about 10 minutes or blanch them briefly in boiling water until softened. This makes them easier to thread and speeds up cooking.

Step 5

Trim off just the dirty bottom part of the mini king oyster mushrooms. If the mushrooms are large, you can slice them in half for easier skewering.

Step 6

To remove any fishy smell from the shrimp, soak them in cold water with a splash of lemon juice. If using pre-shelled shrimp, you’re good to go. If not, peel them, remove the heads, and devein them by making a shallow cut along their backs and pulling out the dark vein with a toothpick.

Step 7

Wash the cherry tomatoes thoroughly and remove the small stem caps. Choose tomatoes that are firm to avoid them bursting when skewered.

Step 8

Mini blood sausages are convenient for skewers, but regular blood sausages cut into pieces also work perfectly! Prepare the blood sausages by microwaving them briefly or blanching them in boiling water until tender and ready to be threaded onto skewers.

Step 9

Cut the scallions into pieces roughly the same size as the fish cakes and Vienna sausages. This ensures they cook evenly and look appealing on the skewer.

Step 10

Peel the whole garlic cloves and trim off the root end. Garlic cloves become sweet and aromatic when cooked, adding a wonderful depth of flavor to your skewers.

Step 11

Soak the chicken tenderloins in milk for about 10 minutes to tenderize them and remove any gamey odors. Pat them completely dry with paper towels, then cut into bite-sized pieces for skewering. You can lightly season with salt and pepper, but since these skewers are typically served with a sauce, it’s optional.

Step 12

It’s much easier to assemble the skewers if all your ingredients are prepped and ready. If you have children, letting them help thread the ingredients onto the skewers can be a fun and engaging part of the cooking process! For safety, especially with kids, opt for wooden skewers over sharp metal ones.

Step 13

First up, ‘Rice Cake Skewers & So-tteok So-tteok’ style! Use your favorite combinations of rice cakes, Vienna sausages, fish cakes, and mushrooms. Adding pieces of scallion also makes for a delicious skewer.

Step 14

Next, we’ll make ‘Shrimp and Bacon Wrapped Skewers’. These are incredibly tasty!

Step 15

Wrap a piece of shrimp with half a slice of bacon and secure it by threading it onto the skewer. The combination of plump shrimp and savory bacon is irresistible.

Step 16

Thread pieces of scallion in between the shrimp and bacon wraps. The scallions add a subtle sweetness and aromatic quality that complements the other ingredients.

Step 17

For the third skewer, we’re making ‘Cherry Tomato and Bacon Wrapped Skewers’. The burst of freshness from the tomato paired with the salty bacon is a delightful contrast.

Step 18

Wrap each cherry tomato with a third of a slice of bacon and then skewer them. Cook over medium heat to ensure the bacon crisps up nicely without burning the tomato.

Step 19

Making the ‘Chicken and Scallion Skewers’ is just as simple.

Step 20

Thread the cut chicken tenderloin pieces and scallion pieces alternately onto the skewer. This creates a ‘chicken and scallion’ skewer, often called ‘pa-dak pa-dak’ in Korean, which translates to ‘scallion chicken’.

Step 21

The ‘Mini Blood Sausage Skewers’ and ‘Garlic Skewers’ are incredibly easy – just thread them onto the skewer as they are! These are simple yet packed with flavor.

Step 22

For the mini blood sausage, garlic, and cherry tomato skewers, using toothpicks is a convenient option, especially for eating at home. If you’re camping and want larger skewers, use regular wooden skewers. Toothpicks make for a neater presentation when serving indoors.

Step 23

Here are all the assembled camping skewers! See? They’re much easier and simpler to make than you might have thought.

Step 24

When enjoying these skewers at home as a late-night snack, pre-cooking them partially in an oven or on a pan will speed up the final grilling. At a campsite, whether they cook quickly or not might depend on the size of your fire, but either way, they’ll be delicious!
