Ingredients- De Cecco Spaghetti 90g (for 1 serving)
- Extra Virgin Olive Oil 2 Tbsp
- Garlic cloves 5
- Salt 2 pinches
- Jarred Arrabbiata Pasta Sauce 200g (Fontana Sicilia Peperoncino brand recommended)
- Dried Peperoncino 1
- Parsley flakes, for garnish (optional)
Cooking Instructions
Step 1
First, thinly slice 5 cloves of garlic. In a pot, add about 600mL of water and bring it to a boil over high heat. Once the water is boiling vigorously, add 2 pinches of salt and about 1/2 teaspoon of cooking oil to the water. Then, add 90g of spaghetti. Stir the pasta occasionally with chopsticks or tongs to prevent it from sticking together.
Step 2
Boil the spaghetti for 8 minutes, or about 1 minute less than the package instructions suggest for al dente. Once cooked, carefully transfer the spaghetti to a serving bowl. Reserve about one ladleful of the pasta water; this starchy water is excellent for adjusting the sauce consistency later.
Step 3
Drain and dry the pot, or use a clean pan. Add 2 tablespoons of extra virgin olive oil to the pan and heat over low heat. Add the sliced garlic and cook slowly, infusing the oil with garlic flavor. Be careful not to burn the garlic; once it turns a light golden color, crumble in 1 dried peperoncino and sauté briefly with the garlic.
Step 4
When the garlic is fragrant and golden, add 200g of the jarred arrabbiata sauce to the pan. Stir well to combine with the garlic and oil. Bring the sauce to a simmer, then add the cooked spaghetti. Toss the pasta and sauce together for about 2 minutes, allowing the sauce to coat the noodles evenly. If the sauce seems too thick, gradually add some of the reserved pasta water until you reach your desired consistency.
Step 5
Before plating, use two chopsticks to gather the spaghetti in the center and twist it counter-clockwise. This will create a neat, coiled mound of pasta. Sprinkle with parsley flakes for a touch of color and fresh aroma to complete your delicious Arrabbiata pasta.
