Ingredients

  • 1 bunch of wild garlic (dallae), about 50-70g
  • 1/2 cup water (100ml)
  • 1/2 cup soy sauce (Korean soup soy sauce or regular soy sauce)
  • 1 Tbsp gochugaru (Korean chili powder)
  • 2 tsp sugar
  • A pinch of toasted sesame seeds (about 1/2 Tbsp)
  • 1 Tbsp sesame oil
  • 1/2 Korean chili pepper (cheongyang chili), finely chopped (adjust to taste)

Cooking Instructions

We’re going to make a flavorful wild garlic sauce today, packed with the scent of spring. It’s the perfect condiment for a satisfying rice bowl.

First, thoroughly wash the wild garlic. Gently shake the roots under running water to remove any soil, and trim off any wilted or discolored leaves. Once the garlic is dry, finely chop it into pieces about 1cm long. If the pieces are too long, they might be difficult to eat. Set aside.

Pour 1/2 cup (100ml) of water into a mixing bowl.

Add 1/2 cup (100ml) of soy sauce, 1 Tbsp of gochugaru, 2 tsp of sugar, a pinch of toasted sesame seeds (about 1/2 Tbsp), and 1 Tbsp of sesame oil. Finely mince half of the Korean chili pepper and add it to the bowl; you can add more if you like it spicier. Stir all the sauce ingredients together with a spoon until well combined, creating your base sauce.

Now, add the chopped wild garlic to the prepared sauce and gently mix everything together. Your delicious wild garlic soy sauce dip is complete!
