  • 150g Wild Chives (Chamnamul)
  • 1/2 Tbsp Coarse Salt (for blanching)
  • 1 Tbsp Soup Soy Sauce (Gukganjang)
  • 1/2 Tbsp Minced Scallion
  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Toasted Sesame Seeds
  • 1.5 Tbsp Sesame Oil
  • A pinch of Salt (to taste)

Cooking Instructions

Step 1

First, thoroughly wash the wild chives under running water. It’s important to rinse them meticulously to remove any dirt or debris. Once washed, trim the chives into bite-sized pieces, about 2-3 sections each.

Step 2

In a pot, bring enough water to cover the wild chives to a boil. Add 1/2 tablespoon of coarse salt to the water. The coarse salt helps to maintain the vibrant green color of the chives and shortens the blanching time.

Step 3

Once the water is at a rolling boil, carefully add the prepared wild chives and blanch for exactly 30 seconds. Over-blanching will diminish the crisp texture and delicate aroma, so be mindful of the time. This short blanching time is key to this recipe.

Step 4

Immediately after blanching, transfer the wild chives to a bowl of ice-cold water. This rapid cooling stops the cooking process, preserving the fresh green color and ensuring a crisp bite.

Drain the chilled wild chives and gently squeeze out as much excess water as possible with your hands. Leaving too much water can dilute the seasoning, so it’s best to remove as much liquid as you can.

Place the squeezed wild chives into a mixing bowl. Add all the seasoning ingredients: 1 Tbsp soup soy sauce, 1/2 Tbsp minced scallion, 1/2 Tbsp minced garlic, 1 Tbsp toasted sesame seeds, and 1.5 Tbsp sesame oil.
