Ingredients- 100g fresh wild chives (dallae), one bunch
- 5 Tbsp gochugaru (Korean red pepper flakes)
- 10 Tbsp soy sauce
- 1 Tbsp fish sauce
- 2 Tbsp perilla oil or sesame oil
- 3 Tbsp corn syrup or oligodang (rice syrup)
- 4 Tbsp water
- 2 Tbsp toasted sesame seeds
- 2 Tbsp minced garlic

Step 1
【Prepare Ingredients】 Let’s begin making the Dallae Jang, filled with the fragrant essence of spring.

【Washing and Trimming Wild Chives】 Prepare one bunch (about 100g) of fresh wild chives. Since the roots are often covered in soil, it’s crucial to wash them thoroughly under running water multiple times. Pay special attention to cleaning the root areas. Gently brush off any soil clinging to the leaves as well.

【Tip for Removing Soil】 If the soil is stubborn, soak the wild chives in lukewarm water for a little while. Gently rub the roots as if shampooing your hair; the soil will come off much more easily. Wild chives have a lot of fiber and can break easily if washed in cold water, so using lukewarm water helps prevent them from snapping. Don’t worry if some pieces break while washing; they’ll still taste great when mixed with the sauce. Lightly pat the washed wild chives to remove excess water.
