Main Ingredients

  • Water parsley 1/4 bunch
  • Eggs 3

Cooking Instructions

Step 1

Wash the fresh water parsley thoroughly and pat it dry. Pick 2-3 sprigs at a time and carefully arrange them into a round, nest-like shape. Making them look like small, charming bird nests adds to their appeal.

Step 1

Step 2

Crack the 3 eggs into a bowl. Remove the chalazae (the stringy white bits) to ensure a smoother texture. Add a pinch of salt and 1 tablespoon of cooking wine (or Mirin) to the eggs. Gently whisk the mixture until well combined, being careful not to create too much foam. The cooking wine helps to eliminate any eggy odor and enhances the flavor.

Step 2

Step 3

Heat a pan over medium-low (or low) heat. Add a little cooking oil, then lightly wipe it with a paper towel to coat the pan evenly. This prevents the pancake from burning and ensures even cooking. Carefully place the prepared water parsley nests into the heated pan, one by one.

Step 3

Step 4

Gently pour a suitable amount of the whisked egg mixture into the center opening of each water parsley nest. Be mindful not to overfill, as this could cause the egg to spill out. As the egg begins to set, reduce the heat to low.

Step 4

Step 5

When the egg is about halfway cooked, carefully flip the pancakes using a spatula or chopsticks. Cook until golden brown on both sides. Once fully cooked, your delicious Water Parsley Nest Pancakes are ready! They are best enjoyed warm.
