Aromatic Water Parsley and Shrimp Oil Pasta

Today, I made a simple pasta using water parsley, which is full of spring fragrance. The slightly pungent and refreshing aroma of water parsley makes pasta, which can be a bit rich, much more delicious. Since anyone can easily follow along with just water parsley and shrimp, be sure to try making it!

Ingredients

  • Spaghetti pasta for 1 serving (approx. 100g)
  • 8 sprigs of fresh water parsley
  • 50g peeled shrimp meat
  • 3 cloves garlic
  • 5 dried peperoncino
  • 1 tablespoon coarse salt (for boiling pasta)
  • Olive oil (extra virgin)
  • A pinch of black pepper

Cooking Instructions

Step 1

First, prepare the ingredients for the pasta. Thinly slice the garlic. Crush the dried peperoncino lightly with the back of a knife or chop them finely. Wash the water parsley thoroughly under running water and cut it into approximately 5cm lengths.

Bring a large pot of water to a boil. Once boiling, add 1 tablespoon of coarse salt and add the spaghetti pasta. Cook for about 8-10 minutes, or about 1 minute less than the package instructions, until al dente. Drain the cooked pasta and toss it with 1-2 tablespoons of olive oil to prevent sticking.

Heat a frying pan over medium-low heat and add a generous amount of olive oil. Add the sliced garlic and crushed peperoncino, and sauté for about 2-3 minutes until golden and fragrant. Be careful not to burn the garlic. You should smell a subtle garlic aroma at this stage.

Add the 50g of shrimp meat to the pan and sprinkle with a pinch of black pepper. Increase the heat to medium and cook until the shrimp turns pink and is fully cooked, about 2-3 minutes. Avoid overcooking the shrimp, as it can become tough.

Once the garlic is golden and the shrimp is cooked, add the cooked spaghetti pasta to the pan. Add about 3-4 tablespoons of pasta water. The pasta water helps the sauce emulsify and coat the noodles beautifully. Toss everything together lightly.

Finally, add the prepared water parsley and sauté for about 1 minute, just until it wilts slightly. This will give you a delicious water parsley pasta! The key is to keep the water parsley crisp, so don’t overcook it. Serve the finished pasta warm and enjoy.
