Main Ingredients- 2 fresh eggplants
- 1/2 onion
- 1/2 yellow bell pepper
- 1/2 red bell pepper
- 10 cm white part of green onion
Seasoning Ingredients- 1 Tbsp minced garlic
- 2 Tbsp oyster sauce
- 1/2 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp roasted sesame seeds
- 3 Tbsp cooking oil
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, finely chop the white part of the green onion, about 5mm thick, to add an aromatic flavor.
Step 2
Peel the onion and chop it roughly. Separating the layers at this stage will help the seasoning penetrate evenly.

Chop the colorful yellow and red bell peppers roughly, similar to the onion. Bell peppers add sweetness and texture when cooked.
Step 4
Trim the ends of the eggplant, the star of today’s dish, cut it lengthwise into quarters, and then into roughly 2-3 cm pieces. Since eggplant softens considerably when cooked, it’s best not to cut it too small.
Step 5
Now, let’s start stir-frying. Heat the pan, add 3 Tbsp of cooking oil, the chopped green onion, and 1 Tbsp of minced garlic. Stir-fry over medium-low heat, being careful not to burn, to fully release their aroma. The garlic and green onion flavors will infuse into the oil, adding a delicious fragrance.
Step 6
Once the aroma of garlic and green onion rises, add the chopped onion, yellow bell pepper, and red bell pepper. Stir-fry together until the vegetables become slightly translucent.

As the onion and bell peppers begin to soften, add the prepared eggplant and stir-fry. Eggplant wilts quickly when heated, so it’s important to cook it just until it softens slightly, rather than stir-frying for too long.

When the eggplant has slightly wilted and all the vegetables start to combine, add 1 Tbsp of oyster sauce and 1/2 Tbsp of soy sauce. Stir-fry quickly to let the flavors meld. Oyster sauce adds umami, and soy sauce provides a subtle savory taste and color.

Once the vegetables and seasoning are evenly mixed and the eggplant is completely tender, drizzle in 1 Tbsp of sesame oil for the final touch. The nutty aroma of sesame oil will further enhance the dish’s flavor.
