For a beautiful presentation and balanced meal, today we’re making three types of namul with a super simple recipe: Stir-Fried Shiitake Mushrooms, Seasoned Bean Sprouts, and Seasoned Spinach. You can create wonderful namul with just sesame oil, salt, and minced garlic. Adding your favorite side dishes from home will elevate your bibimbap to a hearty and satisfying meal. Make your table special with these easy and quick namul dishes!
Bean Sprout Namul Ingredients- 100g Bean sprouts
- 2 pinches Salt
- 2 drops Sesame oil
- A little Minced garlic
Spinach Namul Ingredients- 4 bunches Spinach
- 2 pinches Salt
- 2 drops Sesame oil
- A little Minced garlic
Stir-Fried Shiitake Mushroom Ingredients- 100g Dried shiitake mushrooms
- 1 tsp Minced garlic
- 3 pinches Salt
- 1 tsp Sesame oil
- 1 tsp Cooking oil
- 4 bunches Spinach
- 2 pinches Salt
- 2 drops Sesame oil
- A little Minced garlic
Stir-Fried Shiitake Mushroom Ingredients- 100g Dried shiitake mushrooms
- 1 tsp Minced garlic
- 3 pinches Salt
- 1 tsp Sesame oil
- 1 tsp Cooking oil
Cooking Instructions
Step 1
Prepare 100g of dried shiitake mushrooms. Thinly slice them and soak in lukewarm water for about 1 hour until fully rehydrated. This process enhances their unique aroma and texture.
Step 2
Once rehydrated, place the shiitake mushrooms in a sieve to drain. Crucially, do not discard the mushroom soaking water! This flavorful broth will be used later to blanch the bean sprouts and spinach. Squeeze out as much water as possible from the drained mushrooms by hand.
Step 3
Set the squeezed shiitake mushrooms aside for a moment. Now it’s time to prepare the spinach and bean sprouts. Making three types of namul at once makes the process much more efficient.
Step 4
Add a pinch of salt to the reserved mushroom soaking water and bring it to a rolling boil over high heat. This aromatic broth will be used to blanch our vegetables.
Step 5
While the shiitake broth is boiling, gently mix the squeezed shiitake mushrooms with salt and minced garlic. These seasoned mushrooms will be stir-fried shortly.
Step 6
Once the broth is at a rolling boil, add the spinach and blanch for just 10 seconds, then immediately remove. Be careful not to overcook, as it will become mushy. Immediately rinse the blanched spinach under cold water to cool it down and squeeze out any excess water. Next, use the same boiling broth to cook the bean sprouts; cover the pot and cook until tender. Drain the cooked bean sprouts, rinse under cold water, and squeeze out excess water. Blanching two types of vegetables using the same pot of broth is incredibly convenient!
Step 7
For the spinach, which has been squeezed dry, simple seasoning is key. Add sesame oil, salt, and minced garlic. Gently mix with your hands for a delicious spinach namul.
Step 8
Similarly, for the drained bean sprouts, add salt, sesame oil, and minced garlic, just like the spinach. Mix well for a crunchy and savory seasoned bean sprout namul.
Step 9
Finally, let’s stir-fry the shiitake mushrooms. Lightly heat a pan with a small amount of cooking oil. Add the seasoned shiitake mushrooms and stir-fry over medium heat until tender and fragrant. Once cooked, drizzle in a little sesame oil and mix well to finish the delicious stir-fried shiitake mushrooms.
