Aromatic Stir-fried Petasites and Special Petasites Ramen Stir-fry

This recipe features a flavorful stir-fry made with delicious, in-season Petasites (also known as Butterbur stalks). The unique, slightly bitter aroma of the Petasites combined with the nutty flavor of perilla powder is absolutely fantastic! We’re also including a bonus recipe for a Petasites Ramen Stir-fry, perfect for using up leftover stalks. (Note: For instructions on how to boil Petasites, please refer to @6933909.)
Petasites Stir-fry Main Ingredients- 350g Boiled Petasites (Butterbur stalks)
- 2 Tbsp Cooking oil
- 1/2 cup Water
- 1 packet Ramen noodles (optional)
Petasites Stir-fry Seasoning- 1 Tbsp Minced garlic
- 1 Tbsp Chopped green onion
- 1 Tbsp Soy sauce
- 1 Tbsp Cooking wine (Mirin)
- 1 Tbsp Fish sauce (Anchovy sauce)
- 2 Tbsp Ground perilla seeds
- 2 Tbsp Perilla oil
- 1 Tbsp Toasted sesame seeds
- 1 Tbsp Minced garlic
- 1 Tbsp Chopped green onion
- 1 Tbsp Soy sauce
- 1 Tbsp Cooking wine (Mirin)
- 1 Tbsp Fish sauce (Anchovy sauce)
- 2 Tbsp Ground perilla seeds
- 2 Tbsp Perilla oil
- 1 Tbsp Toasted sesame seeds
Cooking Instructions
Step 1
First, cut the pre-boiled Petasites into bite-sized pieces, about 3-4 cm long. Cutting them to a manageable length will make stir-frying easier.
Step 2
Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the minced garlic and chopped green onion and sauté until fragrant. It’s important to let the aroma of the garlic and green onion infuse into the oil.
Step 3
Add the cut Petasites to the aromatic garlic and green onion oil and stir-fry quickly over high heat. Stir-frying briefly will help evaporate some of the moisture and improve the texture.
Step 4
Once the Petasites are partially stir-fried, add 1 tablespoon of soy sauce, 1 tablespoon of cooking wine, and 1 tablespoon of fish sauce. Stir-fry everything together until the seasonings are evenly distributed. Then, pour in 1/2 cup of water, cover the pan, and simmer over low heat for 5-7 minutes. This simmering step allows the flavors to penetrate the Petasites, making them much more delicious.
Step 5
When the liquid has reduced to a simmer, remove the lid. Add 1 tablespoon of ground perilla seeds and 2 tablespoons of perilla oil, and stir-fry quickly until well combined. Make sure to stir continuously to prevent the perilla powder from clumping.
Step 6
Transfer the finished Petasites stir-fry to a serving dish and sprinkle with 1 tablespoon of toasted sesame seeds for a final touch. This dish is wonderful served with freshly cooked hot rice!
Step 7
*Now for the bonus recipe: Petasites Ramen Stir-fry!* First, prepare 1 packet of ramen noodles by boiling them according to package directions, including the seasoning packet.
Step 8
Carefully pour the ramen broth into a separate bowl. Transfer the cooked ramen noodles to the pan (wok) where you made the Petasites stir-fry. Add a suitable amount of the prepared Petasites stir-fry to the noodles and stir-fry them together.
Step 9
Add another 1 tablespoon of perilla oil to the pan and stir-fry the ramen and Petasites mixture for another 1-2 minutes, ensuring everything is well combined. The goal is to meld the chewy texture of the noodles with the aromatic Petasites. Transfer the finished Petasites Ramen Stir-fry to a serving plate.
Step 10
Serve the reserved ramen broth in a separate bowl. This completes your flavorful and satisfying Petasites Ramen Stir-fry meal. Enjoy it with the broth for an extra layer of taste!
