How to Make Delicious Oyster Mushroom and Zucchini Stir-Fry as a Side Dish
As someone who isn’t a full-time homemaker but enjoys home-cooked meals most days (except for dining out with friends!), I’m always thinking about what side dishes to make. While ordering delicious food is the easiest and most convenient option, I truly love home-style cooking. This leads to the daily dilemma: ‘What side dish should I make today?’ Making the same dishes repeatedly can be boring, and coming up with something special and unique isn’t always easy. I usually rotate a few go-to dishes weekly, and today, I made a delightful stir-fry of oyster mushrooms and zucchini. I haven’t made this dish in years! The last time I made it, I included perilla seed powder for a nutty flavor. Today, however, I opted for a simpler approach, seasoning it solely with salted shrimp (saeu-jeot) for a clean and refreshing taste. While delicious with perilla seed powder, this version with just saeu-jeot is equally wonderful. Let me share this simple yet flavorful recipe with you right away!
Main Ingredients- 1 pack Oyster mushrooms (approx. 200g)
- 1 Zucchini (medium-sized)
- 1 Onion (medium-sized)
- 5cm piece Carrot
Cooking Instructions
Step 1
First, prepare the oyster mushrooms. Gently tear them apart with your hands into bite-sized pieces, separating them into individual strands or small clusters. Avoid tearing them too small, as they might clump together during cooking.
Step 2
Wash the zucchini thoroughly and slice it into half-moon shapes, about 0.5cm thick. Peel the carrot and slice it into half-moon shapes as well, similar to the zucchini, but slightly thinner at about 0.3cm thick. Thinly slicing the carrot helps it cook evenly with the other ingredients.
Step 3
Peel the onion and slice it into thin strips, about 0.3cm thick. Sliced onions will add sweetness and depth of flavor to the stir-fry.
Step 4
Now, let’s begin stir-frying. Heat a suitable amount of cooking oil in a pan over medium heat. Add the sliced zucchini first and stir-fry for about 2-3 minutes, until it becomes slightly translucent and tender.
Step 5
Once the zucchini is about 50% cooked, add the prepared oyster mushrooms and carrots to the pan. Continue to stir-fry for another 3-4 minutes, until the mushrooms have softened and the carrots are tender-crisp.
Step 6
When all the vegetables are tender, add 1 tablespoon of salted shrimp (saeu-jeot) and stir well to season. Saeu-jeot is the secret ingredient for adding umami and a clean finish. Adjust the seasoning to your taste.
Step 7
Finally, turn off the heat and sprinkle 1/2 tablespoon of toasted sesame seeds over the dish. The nutty aroma of the sesame seeds completes this delicious Oyster Mushroom and Zucchini Stir-Fry. Enjoy it with a warm bowl of rice!
