  • Rice (medium or glutinous) 3 cups
  • Water 3 cups (adjust based on rice type and soaking time)
  • Shiitake Mushrooms 2
  • Doenjang (Soybean Paste) 0.3 Tbsp (for a savory depth)
  • Sesame Oil 1 Tbsp (for nutty aroma)

Wild Chive Sauce Ingredients

  • Fragrant Wild Chives (Dallae) 60g
  • Soy Sauce (Jin Ganjang) 5 Tbsp
  • Minced Garlic 0.5 Tbsp
  • Red Pepper Flakes (fine) 1 Tbsp
  • Sesame Oil 1 Tbsp
  • Cooking Wine (Mirin) 1 Tbsp (removes gaminess and adds flavor)
  • Plum Extract 0.5 Tbsp (for subtle sweetness and aroma)
  • Sesame Seeds 0.5 Tbsp (for nutty flavor and texture)

Cooking Instructions

First, thoroughly wash the fragrant shepherd’s purse (Naengi) under running water to remove all soil. Trim any tough roots. Clean the shiitake mushrooms by wiping or rinsing, and prepare the wild chives (Dallae) by trimming the roots and washing them clean.

Finely chop the cleaned shepherd’s purse into bite-sized pieces, about 1cm long. In a bowl, gently mix the chopped ‘Naengi’ with 0.3 Tbsp of ‘Doenjang’ and 1 Tbsp of sesame oil. This is the first seasoning, which helps to mellow any bitterness and enhance the flavor.

Rinse the rice well and drain it in a sieve for a moment. Place the rice in your rice cooker and add 3 cups of water. (Adjust the water amount depending on the type of rice and how long it was soaked). Evenly spread the seasoned shepherd’s purse over the rice.

Thinly slice the shiitake mushrooms and arrange them attractively on top of the ‘Naengi’. Now, select the ‘Cook’ or ‘White Rice’ setting on your electric rice cooker and start cooking.

In a bowl, combine the chopped ‘Dallae’, 5 Tbsp soy sauce, 0.5 Tbsp minced garlic, 1 Tbsp red pepper flakes, 1 Tbsp sesame oil, 1 Tbsp cooking wine, 0.5 Tbsp plum extract, and 0.5 Tbsp sesame seeds. Mix everything well to create a flavorful sauce.
