Wild Chive Pancake Ingredients- 2 bunches fresh wild chives (dal-rae)
- 2 handfuls clam meat (cleaned)
- 2 handfuls shrimp meat (peeled and deveined)
- 1 red chili pepper
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp cooking wine (mirin)
- 3 cups pancake mix (buchim garu)
- Water (as needed for batter consistency)
- 2 eggs
Wild Chive Dipping Sauce- 1/2 bunch wild chives (trimmed)
- 1 red chili pepper
- 1/2 Tbsp minced garlic
- 8 Tbsp soy sauce (yangjo ganjang)
- 1 Tbsp toasted sesame seeds
- 1 tsp red chili flakes (gochugaru)
- 1/2 bunch wild chives (trimmed)
- 1 red chili pepper
- 1/2 Tbsp minced garlic

Cooking Instructions
Step 1
In a large bowl, combine the 3 cups of pancake mix and 2 eggs. Gradually add water while mixing until you achieve a thin, pourable batter. It should flow smoothly off a spoon.

Thoroughly wash the fresh wild chives under running water, gently rubbing the roots to remove any dirt. Trim off any tough root ends. Cut the cleaned chives into lengths of about 2-3 cm.

If your clam meat has any dark outer shells attached, remove them. Finely chop the clam meat to enhance the flavor of the pancake.

For half of the batter, use the marinated shrimp meat instead. (You can cook the shrimp and clam versions separately or mix them together.)
