Nettle Doenjang Guk (Soybean Paste Soup): A Recipe Bursting with Unique Spring Flavors!

Ingredients- Nettles (Nami), cleaned and trimmed, 100g
- Doenjang (Korean soybean paste), 2 Tbsp
- Minced garlic, 1 Tbsp
- Firm or silken tofu, cubed, 1/4 block
- Soup soy sauce (Guk-ganjang), 1 Tbsp (or sea salt to taste)
- Chopped green onions, 1 stalk portion
Cooking Instructions
Step 1
Start by pouring 1.5 liters (about 6 cups) of water into a pot or deep pan. Add 2 generous tablespoons of doenjang (Korean soybean paste) and dissolve it thoroughly with a spoon until no lumps remain. You can adjust the amount of doenjang to your preference.
Step 2
Once the doenjang-infused water comes to a rolling boil over high heat, add the cleaned and trimmed nettles. Nettles lose their aroma if overcooked, so add them and immediately proceed to the next step.
Step 3
Immediately after adding the nettles, stir in 1 tablespoon of minced garlic. The pungent aroma of garlic will add depth and richness to the entire soup.
Step 4
Gently add the tofu, which has been cut into bite-sized cubes, into the pot. It’s best to add tofu when the soup is already boiling to prevent it from breaking apart too much. If using silken tofu, it will offer an even softer texture.

Season the soup by adding 1 tablespoon of soup soy sauce (guk-ganjang). If you don’t have guk-ganjang, you can use sea salt to adjust the taste. Be mindful of the saltiness of the doenjang itself and add seasoning gradually while tasting.

Finally, generously add the finely chopped green onions. The fresh and slightly sweet flavor of the green onions will further enhance the overall taste of the doenjang guk.
