It feels like spring has already arrived at our dining table! I made a pot rice dish with wild chives. This is a recipe I created for the very first time in my life. Experience the fresh, earthy aroma of wild chives combined with perfectly cooked rice, creating a dish that’s both comforting and incredibly flavorful. This recipe is perfect for those days when you crave something light yet satisfying, or for adding a touch of spring to any meal.
Pot Rice Ingredients- 200g fresh wild chives (naengi), cleaned and trimmed
- 1/4 carrot, finely julienned
- 5 cups rice (rinsed and soaked for 30 minutes)
- 3 pieces dried kelp (kombu), for cooking rice
- A small bunch of wild garlic (dallae), finely chopped
- 1 tablespoon toasted sesame seeds (for garnish)
- 1 tablespoon sesame oil (for mixing)
- A pinch of black pepper (for flavor enhancement)
Wild Chive Pot Rice Seasoning Sauce- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame seeds

Cooking Instructions
Step 1
Introducing ‘Naengi Sottbap’ (Wild Chive Pot Rice), a dish that captures the essence of spring. Get ready for a delightful culinary experience!
Step 2
First, rinse the rice thoroughly and let it soak in water for 30 minutes. When cooking the rice, add 3 pieces of dried kelp (kombu) to the 5 cups of water. Cooking the rice with kelp enhances its flavor and aroma.

Wash the carrot thoroughly to remove any dirt, then finely julienne it so it blends perfectly with the rice.
Step 4
Prepare the wild garlic (dallae) by washing it to remove any soil, especially around the roots, and then finely chopping it. This will be used for the seasoning sauce.

In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of toasted sesame seeds, 1 tablespoon of sesame oil, and a pinch of black pepper to create the delicious dallae sauce. Feel free to add minced garlic or chili flakes for extra flavor.

Blanch the cleaned wild chives (naengi) in boiling water briefly to remove any bitterness, then chop them into bite-sized pieces. You can layer them at the bottom of the pot before adding the rice, or spread them evenly over the rice before cooking. This allows the chive’s delicate flavor to infuse the rice beautifully.

Once the rice is nearly cooked, reduce the heat to low and cover the pot with a lid. Let it steam for 5 minutes. This steaming process allows the rice grains to become fluffier and more tender.
