While dolliae are a quintessential spring vegetable, thanks to modern greenhouses, we can enjoy them even in autumn. However, they truly shine with their most fragrant aroma when in season during spring. I had planned to prepare this to go with grilled meat tomorrow, but the enticing scent inspired me to make it right away.   • 1 Tbsp soy sauce
  • 2 Tbsp oligo syrup (or honey/corn syrup)
  • 1 Tbsp rice vinegar
  • 2 Tbsp perilla oil (deulkireum)
  • 0.5 tsp minced garlic
  • Generous pinch of toasted sesame seeds

First, the wild chives need a bit of meticulous preparation. Although it might seem a little tedious, putting in the effort to clean and trim them will truly bring out the natural, fresh flavor of the dolliae. Doing it yourself ensures the freshest possible enjoyment.
