You’ve made wild chives salad and sauce, and have a little bit left over after enjoying it with jeon (savory pancakes). This recipe transforms those delightful leftovers into an exciting tteokbokki! Since the wild chives sauce is already soy sauce-based and includes chili powder, it naturally has a savory and slightly spicy flavor profile, making it a perfect addition to tteokbokki. I thought, ‘Why not add the leftover wild chives sauce and salad to tteokbokki?’ I decided to enrich it further by adding some thinly sliced beef, which I had saved in the freezer for shabu-shabu. The result is a tteokbokki that’s reminiscent of royal cuisine (Gungjung Tteokbokki) yet vibrant with the fresh, aromatic essence of wild chives. You could even call it ‘Wild Chive Sauce Tteokbokki’!
Ingredients- Wild chives salad, 2 cups (prepared in advance)
- Soy sauce, 1 Tbsp
- Shabu-shabu style beef, 100g
- Tteokbokki rice cakes, 500g
- Scallions, chopped, 2 Tbsp
- Rice wine (or Mirin), 1 Tbsp
- Boiled eggs, 2 (optional)
- Black pepper, 1 tsp
- Sesame oil, 1 tsp
- Toasted sesame seeds, 1 tsp
Cooking Instructions
Step 1
Since the wild chive sauce and salad are already prepared, this tteokbokki comes together at super speed! Heat a pan over medium heat and add a generous amount of cooking oil. Add the chopped scallions and sauté until fragrant to create scallion oil. This step builds a wonderful flavor base for the tteokbokki.
Step 2
Once the scallion oil is aromatic, add the thinly sliced beef. Because it’s shabu-shabu style, the beef is very thin and cooks quickly. Stir-fry the beef until it turns a pale grey color. Be careful not to overcook it, as it can become tough.
Step 3
After stir-frying the beef, add 1 Tbsp of rice wine (or mirin). This helps to remove any potential gamey odors from the meat and adds a subtle depth of flavor. Continue to stir-fry with the beef.
Step 4
You can add boiled eggs if you have them, or as shown in the picture, you can add pan-fried eggs. Now, add the prepared wild chive salad and wild chive sauce to the pan. Mix everything together while stir-frying, allowing the flavors to meld.
Step 5
Finally, add the tteokbokki rice cakes to the pan and continue to stir-fry. The dish will start to resemble a soy-glazed tteokbokki or a variation of royal tteokbokki, showcasing a unique blend of textures and flavors.
Step 6
As the rice cakes gradually soften and absorb the sauce’s color, drizzle in 1 tsp of sesame oil for added richness and aroma. Sprinkle with toasted sesame seeds and a pinch of black pepper. Gently mix everything together to ensure the seasonings are evenly distributed.
Step 7
Garnish generously with toasted sesame seeds and some of the remaining chopped scallions. Your aromatic wild chive tteokbokki is now ready! It offers a delightful balance of savory and spicy notes, complemented by the richness of the beef. It’s a fantastic way to enjoy both noodles and meat. I do wish I had some ramen or glass noodles to add – that would have been perfect too! Enjoy this taste of spring.
