Main Ingredients

  • 600g Smoked Duck Breast
  • 120g Fresh Minari (Water Parsley)

Seasoning

  • 1 Tbsp Herb Salt
  • 1 tsp Ginger Powder
  • A pinch of Sesame Seeds (for garnish)

Cooking Instructions

Step 1

First, thoroughly wash 120g of fresh minari under running water. Drain any excess water and cut it into bite-sized pieces, approximately 3-4 cm long. Set aside.

Open a 600g pack of smoked duck breast and place it directly into a pan. Since duck breast releases a lot of fat, it’s best to stir-fry it on its own initially without adding any other ingredients.

Stir-fry the smoked duck breast over medium heat for about 3 minutes. During this time, delicious duck fat will render out. If there’s an excessive amount of rendered fat, you can carefully skim some off with a paper towel or collect it in a separate small bowl to use in other dishes later.

After removing some of the rendered fat, add 1 tablespoon of herb salt and 1 teaspoon of ginger powder to the pan with the smoked duck. Stir-fry together for another 2-3 minutes, allowing the seasonings to coat the duck evenly. If you don’t have ginger powder, you can substitute it with ginger juice or finely minced fresh ginger for an extra aromatic touch.

Once the smoked duck is nicely browned and the seasonings are well incorporated, add the prepared minari to the pan and stir-fry it with the duck. It’s important to stir-fry minari quickly over high heat, as overcooking will make it limp and lose its fresh flavor.

Stir-fry the minari just until it begins to wilt slightly (about 1 minute or less). This will preserve its fresh aroma and crisp texture. Just before turning off the heat, sprinkle a pinch of sesame seeds over the dish for a nutty finish. Taste and adjust seasoning with salt if needed.
