  • Cooking : Boil / Simmer
  • Servings : 3 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Intermediate

Main Ingredients

  • 300g raw shrimp, peeled and deveined
  • 10 cloves garlic
  • 1 Tbsp dried chili flakes (peperoncino)
  • 100-200ml extra virgin olive oil (enough to generously cover the shrimp)
  • 1 baguette, sliced (for serving)

Seasoning & Garnish

  • Salt, to taste
  • Black pepper, to taste
  • Chopped parsley, for garnish

Cooking Instructions

Step 1

If using frozen shrimp, rinse them under cold running water in a colander, separating each piece. Pat them thoroughly dry with paper towels. This step is crucial to prevent splattering oil and to remove any fishy odor.

Step 1

Step 2

Season the dried shrimp evenly with salt. Think of sprinkling a pinch of salt per shrimp to ensure consistent flavor without over-salting.

Step 2

Step 3

Follow with a good sprinkle of black pepper over all the shrimp. Gently toss to coat and let it marinate for a few minutes.

Step 3

Step 4

Prepare the garlic by washing the whole cloves and trimming off the hard ends. This helps release more flavor during cooking.

Step 4

Step 5

Slice the garlic cloves thinly into about 0.5 cm thick slices (slivered). This ensures they cook evenly and infuse the oil beautifully without burning too quickly.

Step 5

Step 6

In a small, oven-safe skillet or a shallow pot, pour in 100-200ml of extra virgin olive oil. Add the sliced garlic and chili flakes. Place over medium-low heat and gently simmer to infuse the oil with their flavors.

Step 6

Step 7

As the oil begins to warm and the garlic and chili release their aroma, stir in about half a teaspoon of salt and half a teaspoon of black pepper. This enhances the overall flavor profile of the gambas.

Step 7

Step 8

Once the garlic is lightly golden and fragrant (be careful not to burn it!), increase the heat slightly to medium. Add the seasoned shrimp to the skillet, spreading them out in a single layer so they cook evenly.

Step 8

Step 9

Cook the shrimp until they turn pink and curl up, indicating they are cooked through. This usually takes just a few minutes. Avoid overcooking, as this can make the shrimp tough. Once cooked, remove from heat. Sprinkle with chopped parsley for a fresh finish. Serve immediately with slices of toasted baguette for dipping into the flavorful olive oil. Enjoy your delicious homemade Gambas!
