Main Ingredients
- 1 serving of somyeon noodles (approx. 100g)
- 1 large scallion (focus on the white parts)
- Generous amount of cooking oil (enough to fry the scallions)

- 2 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 1/2 Tbsp sugar
- 2 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 1/2 Tbsp sugar
Cooking Instructions
Step 1
First, prepare the star ingredient: the scallions. Wash the scallions thoroughly and then slice them diagonally into approximately 0.5cm thick pieces. For the thicker white parts of the scallion, consider splitting them in half lengthwise. This helps the seasoning penetrate better and improves the texture. It’s recommended to use mostly the white parts, as the green parts can have a stronger flavor.
Step 2
Heat a deep pan or wok over medium-low heat and add a generous amount of cooking oil. Once the pan is warm, add all the sliced scallions. Slowly sauté the scallions, stirring occasionally, until they become golden brown and release a sweet aroma. This process is key to extracting the rich, deep flavor of the scallion oil. Be careful not to burn them; cook them gently until fragrant.
Step 3
Once the scallions are sufficiently fried and have a nice golden hue, add all the seasoning ingredients to the pan. Combine 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, and 1/2 tablespoon of sugar. Stir well over low heat. Since the sugar can burn easily, lower the heat and stir quickly to prevent the seasoning from scorching. You’ll notice a delicious aroma as the scallion oil and seasoning meld together.

Next, boil 1 serving of somyeon noodles (about 100g) in plenty of water. For a perfectly chewy texture, cook the noodles about 30 seconds to 1 minute less than the time indicated on the package. Once cooked, immediately rinse them under cold water to remove excess starch and drain them thoroughly. This step prevents the noodles from becoming mushy and ensures they mix well with the sauce.
Step 5
Add the drained somyeon noodles to the prepared scallion oil and seasoning mixture. Using chopsticks or tongs, gently toss the noodles to coat them evenly with the sauce. Mix quickly but carefully to avoid breaking the noodles. It’s best to mix the noodles while they are still warm to allow the flavors to fully penetrate.
