  • 200g small dried anchovies (for stir-frying)

  • 3 cloves minced garlic (approx. 1 Tbsp)
  • 2 Korean chili peppers, finely chopped
  • 2 Tbsp soy sauce
  • 1 Tbsp gochugaru (Korean chili powder)
  • 1/3 Tbsp ginger syrup (or a pinch of ginger powder)
  • A drizzle of perilla oil (for finishing)

Cooking Instructions

Step 1

First, prepare the perilla sprouts. Remove any tough stems to ensure a more tender texture. Rinse the prepared perilla sprouts gently a couple of times under running water to remove any dirt or impurities. You don’t need to dry them completely, but shake off excess water before proceeding.

Step 2

This recipe skips the blanching step for convenience. Heat a pan over medium-low heat and add the perilla sprouts. Stir-fry them for a short while until they start to release their moisture. At this point, add the minced garlic (about 3 cloves) and the finely chopped Korean chili peppers. Continue to stir-fry briefly to release their aromas.

Add the small dried anchovies (200g) and toss everything together well, like a ‘shake shake!’ Now it’s time for seasoning. Add the soy sauce (2 Tbsp), gochugaru (1 Tbsp), and ginger syrup (1/3 Tbsp).
