Ingredients

  • 80 Perilla leaves
  • 1 Scallion or green onion
  • 1/4 Carrot (optional, for color)
  • 1 Red chili pepper
  • 1 Green chili pepper

Seasoning

  • 10 Tbsp Soy sauce
  • 4 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced garlic
  • 1 Tbsp Sesame oil
  • 1 Tbsp Sesame seeds

Cooking Instructions

Step 1

Wash the perilla leaves thoroughly under running water and drain them completely. Ensuring they are dry is key to proper seasoning adherence and preservation.

Step 1

Step 2

Trim the tough stem ends of the perilla leaves. This makes them easier to eat and allows the seasoning to penetrate better.

Step 2

Step 3

While optional, adding julienned carrot provides a lovely pop of color. It complements the green of the perilla and red of the chilies beautifully. Cut it into very fine strips for the best texture.

Step 3

Step 4

Finely mince the red and green chili peppers after removing the seeds. You can adjust the amount or keep some seeds for extra heat, according to your preference.

Step 4

Step 5

Scallions are ideal for this recipe, but green onions can be used as a substitute. Slice them thinly into small pieces. They add a nice texture and mild onion flavor to the seasoning.

Step 5

Step 6

Combine the minced chilies, julienned carrot, and sliced scallions/green onions in a mixing bowl.

Step 6

Step 7

Add the soy sauce (10 Tbsp), gochugaru (4 Tbsp), minced garlic (1 Tbsp), sesame oil (1 Tbsp), and sesame seeds (1 Tbsp) to the bowl with the vegetables. Mix well until all ingredients are evenly combined. A helpful ratio guideline is about 2 Tbsp soy sauce, 1 Tbsp gochugaru, 1/3 Tbsp minced garlic, and 1/3 Tbsp sesame oil per 20 perilla leaves.

Step 7

Step 8

Now, it’s time to assemble the kimchi. Lay one perilla leaf flat on your work surface.

Step 8

Step 9

Take a very small amount of the prepared seasoning and spread it thinly over the perilla leaf.

Step 9

Step 10

Just a little seasoning goes a long way! Applying too much will make the kimchi too salty and overpower the delicate flavor of the perilla leaves. Spreading it thinly is the secret to this delicious side dish.

Step 10

Step 11

After seasoning about 10 leaves, place the next leaf on top, alternating the direction. This helps create a neat stack and ensures even seasoning distribution. Even though it might seem like a lot of leaves, they usually fill just one container. You might even wish you had more perilla leaves to make an extra batch!

Step 11

Step 12

Your delicious and aromatic Seasoned Perilla Leaf Kimchi is ready! This is a fantastic summer side dish that will surely awaken your appetite.
