  • 1 Tbsp salt (for blanching)

Seasoning

  • 1 Tbsp minced garlic
  • 1 Tbsp soup soy sauce (Guk-ganjang)
  • 0.5 Tbsp regular soy sauce (Jin-ganjang)
  • 0.5 Tbsp anchovy sauce (Myeolchi-aekjeot)
  • 0.5 Tbsp red pepper flakes (Gochugaru)
  • 1 Tbsp perilla oil (Deulgireum)
  • A pinch of sesame seeds (ground)

First, prepare the perilla greens. Simply trim off any tough stems. You don’t need to remove too much; most of the greens can be used.

Now, let’s blanch the perilla greens. Bring a pot of water to a rolling boil and add 1 tablespoon of salt. Add the prepared perilla greens and blanch for just about 10 seconds. Be careful not to over-blanch, as they can become mushy. Immediately remove them from the boiling water and rinse thoroughly under cold running water 3-4 times to cool them down.

After rinsing in cold water, gently squeeze out as much excess water as possible from the perilla greens. If too much water remains, the seasoning will become diluted. Place the squeezed greens into a large mixing bowl.

It’s time to add the delicious seasoning. To the bowl with the perilla greens, add 1 tablespoon of minced garlic, 1 tablespoon of soup soy sauce, 0.5 tablespoon of regular soy sauce, and 0.5 tablespoon of anchovy sauce. These ingredients will add umami and depth to the dish.
