Mugwort Cake Ingredients- Fresh mugwort 127g
- Wet glutinous rice flour 1 cup (approx. 140g)
- All-purpose flour 1/2 cup (approx. 60g)
- Salt 2 pinches
- Water 1 Tbsp
Cooking Instructions
Step 1
First, select fresh mugwort, remove any wilted leaves or impurities, and trim it cleanly. Place the prepared mugwort in a bowl.
Step 2
To thoroughly clean off any soil or debris, pour water into the bowl, add a splash of vinegar, and soak the mugwort for about 10 minutes. This helps to easily remove attached impurities.
Step 3
Rinse the soaked mugwort thoroughly under running water 3-4 times. After washing, drain the mugwort well in a sieve. Excess water can make the dough too wet, so be sure to drain it thoroughly.
Step 4
Fill a steamer with water, place the steamer rack, and line it with a damp cheesecloth or muslin. Turn the heat to high and cover with a lid to allow the steamer to preheat sufficiently.
Step 5
In a separate bowl, prepare 3/4 cup of wet glutinous rice flour and 1/2 cup of all-purpose flour. Using a mix of glutinous rice flour and all-purpose flour will give the mugwort cake a softer and chewier texture.
Step 6
Add 2 pinches of salt to the sifted flours and mix well. Then, sprinkle 1 Tbsp of water over the flour mixture and lightly combine. Avoid overmixing, as it can cause lumps.

Add the flour mixture from step 5 to the drained mugwort. Gently toss the mugwort so it’s coated with the flour, being careful not to break the mugwort leaves. It’s important to mix gently to ensure the flour coats evenly. If the mixture seems too wet,

sprinkle the remaining 1/4 cup of glutinous rice flour over the top. Gently mix again until the mugwort and flour are well combined. The goal is a moist mixture where the flour is evenly distributed and not clumped.

Carefully spread the mugwort mixture onto the preheated steamer rack, ensuring it’s not clumped together. Spreading it evenly will prevent it from becoming dense like a single cake.
Step 10
Cover with the lid and steam over high heat for about 5 minutes. Mugwort cake doesn’t require long steaming; the key is to steam it just long enough for the mugwort’s aroma to remain vibrant and the flour to cook through.

After 5 minutes, lift the lid to reveal a steamy, fragrant mugwort cake! Freshly steamed mugwort cake is best enjoyed warm, showcasing its wonderful aroma and chewy texture. You can also sprinkle a little sesame seeds or sugar to taste.
