Main Ingredients

  • 1 bunch fresh minari (water parsley)
  • 50g pre-cleaned clams
  • 1/4 carrot
  • 30g pancake mix (buchim garu)
  • 1 green chili, 1 red chili

Other

  • Cooking oil, as needed

Cooking Instructions

Step 1

Begin by preparing the star ingredient, minari. Thoroughly wash the fresh minari under running water to remove any dirt or debris. Trim off any tough stems and then cut the minari into 4-5cm lengths. Rinse the clams clean and drain any excess water. Finely julienne the carrot and the green and red chilies. Lay out all the prepared ingredients to ensure everything is ready.

Step 1

Step 2

In a large bowl, combine the 30g of pancake mix. Gradually add water, a little at a time, while whisking with chopsticks or a whisk until you achieve a thick batter consistency. It shouldn’t be too watery. Once the batter is ready, add the prepared minari, clams, julienned carrot, and chilies to the bowl.

Step 2

Step 3

Gently fold the ingredients into the batter using a spatula or spoon, ensuring everything is evenly coated. Mix gently to avoid breaking the delicate ingredients and to help the jeon cook beautifully.

Step 3

Step 4

Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Ladle a portion of the batter onto the hot pan and spread it thinly and evenly with the back of a spoon. Cooking over medium heat allows the jeon to cook through evenly and achieve a lovely golden-brown color without burning.

Step 4

Step 5

For the best texture, aim to spread the minari jeon as thinly as possible and cook until golden brown and crispy. Once the edges begin to turn golden, carefully flip the jeon and cook the other side until equally golden. Flipping it a couple of times ensures it’s cooked through and develops a beautiful, appetizing color.

Step 5

Step 6

Your aromatic Minari Jeon, filled with the essence of spring, is now ready! The addition of green and red chilies provides a pleasant spiciness that complements the fragrant minari perfectly. Serve this freshly made, warm jeon with a soy-based dipping sauce for an even more delightful experience.
