Main Ingredients- Lovage (Bangpungnamul) 400g
Seasoning Ingredients- Homemade Doenjang 1.5 Tbsp
- Gochujang (Korean chili paste) 0.5 Tbsp
- Toasted sesame seeds, ground 1 Tbsp
- Minced garlic 0.3 Tbsp (optional, can be omitted)
- Sesame oil 2 drizzles (approx. 1 Tbsp)
- Homemade Doenjang 1.5 Tbsp
- Gochujang (Korean chili paste) 0.5 Tbsp
- Toasted sesame seeds, ground 1 Tbsp
- Minced garlic 0.3 Tbsp (optional, can be omitted)
- Sesame oil 2 drizzles (approx. 1 Tbsp)
Cooking Instructions
Step 1
First, bring a generous amount of water to a rolling boil in a pot. Once boiling, add 1/3 Tbsp of coarse salt and prepare to blanch the lovage. Adding coarse salt helps the greens retain their vibrant color and aids in removing impurities.
Step 2
When the water is boiling, add the lovage and blanch it very briefly, for just about 10-15 seconds. Be careful not to overcook, as this can diminish the crisp texture and fragrant aroma of the herb. Quick blanching is key.
Step 3
Immediately remove the blanched lovage from the boiling water and rinse it quickly under cold running water to cool it down. Rinsing thoroughly under cold water for about three times helps the herb stay fresh and maintain its crispness.
Step 4
Once drained and excess water is squeezed out, chop the lovage into bite-sized pieces. If they are too long, they can be difficult to eat, so cutting them into 2-3 cm lengths is recommended. Place the chopped lovage in a bowl and add all the prepared seasoning ingredients (Doenjang, Gochujang, ground sesame seeds, minced garlic, and sesame oil).

Now, gently mix and toss everything with your hands. Ensure the seasonings are evenly distributed throughout the lovage. Mix gently to avoid mashing the herb. You can taste and adjust the Doenjang or sesame oil according to your preference.
