We made a special King Oyster Mushroom and Chive Pancake using the wonderfully fresh Santa King Oyster Mushrooms received from a mushroom cooking contest. The fragrant and chewy mushrooms combined with the crisp chives create a delicious pancake that everyone will love. Here’s a recipe to truly savor the taste of these exceptionally fresh mushrooms.
Main Ingredients- 90g King Oyster Mushrooms (Santa variety)
- 70g Chives
Cooking Instructions
Step 1
First, prepare 90g of fresh Santa King Oyster Mushrooms. Rinse them thoroughly under running water and then drain any excess moisture.
Step 2
Tear the washed mushrooms into bite-sized pieces by hand. Tearing them naturally provides a better texture than cutting them too finely.
Step 3
Wash the 70g of chives cleanly, then cut them into approximately 2-3cm lengths for easy eating. If they are too long, it can be difficult to cook the pancake.
Step 4
Finely mince 1 Cheongyang pepper, removing the stem. You can remove the seeds if you prefer less spiciness.
Step 5
In a large bowl, combine the cut chives and minced Cheongyang pepper. Add 1 Tbsp of frying mix and 2 Tbsp of pancake mix. Gently toss everything together to coat the ingredients evenly with the dry mix.
Step 6
Next, add the torn King Oyster Mushrooms and pour in 120ml of water. Stir gently until all ingredients are well combined to form the batter. The batter consistency should not be too watery.
Step 7
Heat a frying pan with a generous amount of cooking oil. Pour all the batter into the heated pan. Use a spatula or spoon to spread the batter thinly across the pan, shaping the pancake. Making it thin will result in a crispier texture.
Step 8
Arrange thinly sliced pieces of the red chili pepper on top of the batter for garnish. While the pancake is cooking, you can use a chopstick to make small incisions on the surface; this helps ensure it cooks evenly throughout.

Cook over medium heat until one side is golden brown, then flip and cook the other side until it is also golden brown. Flip occasionally to ensure even cooking.
