How to Make Delicious King Oyster Mushroom and Abalone Stir-fry with Fragrant Herbs
Enjoy king oyster mushrooms in a unique way! When grilled, their chewy texture surprisingly resembles abalone. I had three leftover abalones and decided to stir-fry them with king oyster mushrooms, and the result was incredibly chewy and delicious! This is a recipe for abalone and king oyster mushroom stir-fry infused with fragrant herbs. If you love herb-infused dishes, you’ll absolutely adore this. It’s perfect for a special meal!
Ingredients- 2 King Oyster Mushrooms
- 3 Prepared Abalones
- 2 Tbsp Olive Oil
- 1 Tbsp Lemon Juice
- 4 Pinches Salt
- 2 Tbsp White Wine (or Mirin)
- A pinch of Black Pepper
- A pinch of Dried Thyme
- A pinch of Dried Rosemary
- A pinch of Dried Parsley Flakes
Cooking Instructions
Step 1
First, gently wipe the king oyster mushrooms clean with a damp paper towel to remove any dirt from the caps and stems. Then, slice them diagonally into pieces about 0.5 cm thick for easy eating.
Step 2
Similarly, rinse the prepared abalones lightly under running water. Slice them diagonally to match the size of the king oyster mushrooms. Make sure to remove the hard mouthpart from the underside of the abalone when preparing it.
Step 3
Heat a frying pan over medium-low heat and add 2 tablespoons of olive oil. Place the sliced king oyster mushrooms into the pan. Season them with 4 pinches of salt and a pinch of black pepper. Cook the mushrooms over low heat, stirring occasionally, until they turn golden brown and develop a chewy texture. Cooking them slowly allows them to release their moisture and become more delightfully chewy.
Step 4
Once the king oyster mushrooms are nicely golden and slightly chewy, add the prepared abalone to the pan. Pour in 2 tablespoons of white wine (or mirin) to eliminate any fishy smell and enhance the flavor, then add all the dried herbs (thyme, rosemary, and parsley). Continue to cook over low heat for another 1-2 minutes, allowing the abalone to cook through and the flavors to meld beautifully. Finish by drizzling with 1 tablespoon of lemon juice for a refreshing touch.
