Galbi Patty Ingredients- 500g ground pork
- 100g ground beef (optional, for a richer texture)
- 1/3 block firm tofu (approx. 100g)
- 1 medium onion
- 1/3 medium carrot
- 2 green onions (using both white and green parts)
- Vegetable oil for cooking
Galbi Patty Seasoning- 4 Tbsp soy sauce
- 2 Tbsp brown sugar
- 2 Tbsp minced garlic
- 1.5 Tbsp cooking wine (e.g., mirin)
- 3 Tbsp glutinous rice flour (helps bind and tenderize)
- 0.5 Tbsp oyster sauce (for added umami)
- 1.5 Tbsp plum extract (maesil cheong)
- 1 tsp black pepper (adjust to taste)
- 2 Tbsp sesame oil
- 4 Tbsp soy sauce
- 2 Tbsp brown sugar
- 2 Tbsp minced garlic
- 1.5 Tbsp cooking wine (e.g., mirin)
- 3 Tbsp glutinous rice flour (helps bind and tenderize)
- 0.5 Tbsp oyster sauce (for added umami)
- 1.5 Tbsp plum extract (maesil cheong)
- 1 tsp black pepper (adjust to taste)
- 2 Tbsp sesame oil
Cooking Instructions
Step 1
Before you begin cooking, measure and prepare all your ingredients. Having everything ready makes the cooking process much smoother.
Step 2
Wash and peel the onion and carrot, then finely mince them. Separate the white and green parts of the green onions and finely chop them as well. Finely mincing the vegetables ensures they blend well into the patty mixture and results in a smoother texture.
Step 3
Crumble the tofu with the back of a knife, then place it in a sieve and blanch it briefly in boiling water, or simply press it firmly with your hands or a cloth to squeeze out as much moisture as possible. Removing excess water from the tofu is crucial to prevent the galbi mixture from becoming too wet and to help it hold its shape.
Step 4
The star ingredient of this galbi is the green onion! Cut the white parts of the green onions into approximately 3cm lengths. Blanch these white pieces in boiling water for just 10 seconds, then immediately remove them and rinse under cold water to cool. Drain them well. This process softens the green onions and mellows their pungent flavor while retaining a pleasant chewiness.
Step 5
I used a mix of ground pork and 100g of ground beef. Adding beef makes the galbi patties even more tender and flavorful. However, using only ground pork will also yield delicious results.
Step 6
In a large bowl, combine the ground pork, ground beef (if using), the well-drained tofu, minced onion, minced carrot, chopped green onion (green parts), and all the seasoning ingredients (soy sauce, brown sugar, minced garlic, cooking wine, glutinous rice flour, oyster sauce, plum extract, pepper, and sesame oil). Now, use your hands to knead and mix the ingredients thoroughly until they become sticky and well-combined. Kneading for about 5-10 minutes is recommended to ensure the patties hold their shape and have a good texture.
Step 7
Take a portion of the mixture and shape it by wrapping it around the blanched white sections of the green onion (the 3cm pieces). This creates the adorable, green onion-wrapped galbi patties.
Step 8
Shape the remaining galbi mixture into thick, round, and flat patties. You can make them in the traditional galbi shape, or even smaller ones for easier handling, especially for children.
Step 9
Heat a frying pan over medium heat and add a generous amount of vegetable oil. Place the green onion galbi patties in the pan, ensuring they do not touch each other, to allow for even cooking.
Step 10
Once the galbi patties start cooking, gently flip them with chopsticks or a spatula, turning them frequently. Cook until all sides are golden brown and beautifully seared. You can gently press them to check if they are cooked through.
Step 11
For the round-shaped galbi patties, place them in the oiled pan as well. Cook, flipping them over, until they are golden brown on both sides. Be mindful of the heat to prevent them from burning.
Step 12
For extra shine and moisture, you can prepare a glaze by mixing sesame oil and soy sauce in a 2:1 ratio. Brush this glaze onto the patties as they cook. This will result in galbi that are crispy on the outside and wonderfully moist on the inside. These galbi patties are best enjoyed warm, right off the pan!
