Main Ingredients for Green Onion Pork Stir-fry

  • 400g fresh pork belly
  • 5 large green onions
  • 1 onion
  • 2 Korean chili peppers (cheongyang)
  • 1 red chili pepper

Pork Marinade

  • A pinch of salt
  • A pinch of black pepper
  • 1/2 Tbsp minced ginger

Green Onion Pork Stir-fry Sauce

  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp soy sauce
  • 1/2 Tbsp sugar
  • 1 Tbsp anchovy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp salt

Cooking Instructions

Step 1

We always have pork stocked at home year-round, but sometimes my mentor tells me to eat less meat! So, while I often choose fish dishes, weekends are an exception. Today, instead of a typical fish dish, I decided to make a special Jeyuk Bokkeum with plenty of green onions.

The star of today’s dish is the green onion! The suggestion was made to create a Jeyuk Bokkeum with generous amounts of green onions to enhance the pork’s flavor and aroma.

The quality of the pork belly we’re using today is excellent. With pork this good, any dish we make will surely be delicious!

We’ll use a generous amount of green onions and just a little bit of other vegetables, according to your preference. Today’s focus is on bringing out the fragrant essence of the green onions.

First, let’s marinate the pork belly. Add a pinch of salt, a pinch of black pepper, and 1/2 Tbsp of minced ginger. Gently mix everything together. The ginger will help to remove any gamey odor from the pork.

Now, let’s prepare the sauce that will bring this stir-fry to life! In a bowl, combine 1 Tbsp of gochugaru, 1 Tbsp of soy sauce, 1/2 Tbsp of sugar, 1 Tbsp of anchovy sauce, 1 Tbsp of sesame oil, and 1 Tbsp of salt. Mix well.

Pour the prepared sauce over the marinated pork belly and mix thoroughly. Ensure every piece of pork is coated evenly with the sauce. Let it marinate for a bit.

Heat a pan over medium heat and add the marinated pork belly. Stir-fry gently until the surface of the pork starts to cook. Push the pork to the side of the pan.

Once the pork is partially cooked, add the sliced onion to the pan and stir-fry it with the pork. Continue to cook until the onions become translucent.

Now it’s time for the star ingredient – the green onions! Add the sauce-coated green onions to the pan with the pork and onions. Stir-fry together until the green onions are slightly softened. You should hear a gentle sizzle.

Finally, add the sliced Korean chili peppers (cheongyang) and red chili pepper. Stir-fry quickly. The spicy peppers add a lovely color and balance the flavors. While regular Jeyuk Bokkeum is delicious, this version with plenty of green onions is truly captivating!
