I’ve made a delicious clam soup by adding a generous amount of green onions to pre-frozen clam meat. It’s a wonderfully comforting and flavorful dish.

Main Ingredients

  • 3 cups water (approx. 600ml)
  • 1 cup green onions, chopped
  • 1 chicken stock cube
  • 2 eggs
  • 1/2 cup cooked clam meat, thawed
  • 1 Tbsp glutinous rice flour

Seasoning

  • 1 tsp soy sauce (or fish sauce)
  • Pinch of black pepper

Cooking Instructions

Step 1

First, wash the green onions thoroughly. Chop both the white and green parts into approximately 0.5 cm pieces. Generously chopping the green onions will allow their aromatic flavor to infuse beautifully into the soup.

Crack the 2 eggs into a bowl and whisk them well with a fork or whisk until smooth. Also, thaw the cooked clam meat that was stored frozen. You can do this by soaking it in cold water or by using your microwave’s defrost function.

Drain the thawed clam meat well. Then, toss it with 1 tablespoon of glutinous rice flour, ensuring it’s evenly coated. The rice flour coating will help the clam meat hold its shape and prevent it from breaking apart into the soup. Immediately dip the flour-coated clam meat into the beaten egg.

Using a fork, carefully lift each clam meat piece from the egg mixture. This step ensures that the clam pieces don’t stick together and helps maintain their attractive shape after cooking.

In a pot, add 3 cups of water and the chicken stock cube. Once the water comes to a boil, gently add the egg-coated clam pieces one by one. As the clam pieces float to the surface, pour in the remaining egg mixture. Let it simmer for about 2-3 minutes. Season the soup with 1 teaspoon of soy sauce (or fish sauce, if you prefer) to taste, and finish with a pinch of black pepper for added aroma.
