How to Make Delicious and Healthy Gondre Rice with Seasonal Ingredients
If you’re finding ingredient costs a bit high with the approaching holidays, consider focusing on dried foods, which tend to have more stable prices. Today, I’ve prepared aromatic Gondre rice using dried gondre. It’s a wonderful dish for when you lack appetite and is easily digestible, making it enjoyable for everyone, young and old.
Gondre Rice Ingredients- Rice, for 2 servings (approx. 2 cups)
- Mixed grains, 0.5 cup (optional)
- Shiitake mushrooms, 2
- White part of a green onion, 1 stalk
- Soy sauce, 2 Tbsp (for seasoning gondre)
- Plum extract, 2 Tbsp (for seasoning gondre)
- Sesame oil, 2 Tbsp (for seasoning gondre)
Savory Dipping Sauce Ingredients- Green part of a green onion, 1 stalk
- Minced garlic, 1 Tbsp
- Chives, a small handful
- Gochugaru (Korean chili flakes), 1 Tbsp
- Soy sauce, 5 Tbsp
- Plum extract, 2 Tbsp
- Sesame seeds, 1 Tbsp
- Sesame oil, 1 Tbsp
- Green part of a green onion, 1 stalk
- Minced garlic, 1 Tbsp
- Chives, a small handful
- Gochugaru (Korean chili flakes), 1 Tbsp
- Soy sauce, 5 Tbsp
- Plum extract, 2 Tbsp
- Sesame seeds, 1 Tbsp
- Sesame oil, 1 Tbsp
Cooking Instructions
Step 1
First, to soften the dried gondre, soak it in water for at least 30 minutes before cooking. Bring water to a boil, add a handful of gondre (about 10g), and boil for 20 minutes. After boiling, don’t drain immediately; let it sit in the hot water for another 10 minutes to become extra tender and flavorful.
Step 2
Rinse the soaked gondre 2-3 times under cold running water to remove any debris. Drain well, then finely chop it into bite-sized pieces. Avoid chopping too finely to maintain a pleasant texture.
Step 3
In a large bowl, combine the chopped gondre with thinly sliced shiitake mushrooms (2) and the white part of a green onion (1 stalk). Add 2 Tbsp soy sauce, 2 Tbsp plum extract, and 2 Tbsp sesame oil. Gently mix everything together, ensuring the gondre is evenly seasoned.
Step 4
Now, prepare the rice. Wash the rice thoroughly. Use the usual amount of water, or slightly less, for a fluffier, more delicious gondre rice. Soaking the rice for 20-30 minutes after washing will result in even better texture and taste.
Step 5
Spread the seasoned gondre and vegetables evenly over the rice in the rice cooker. Don’t worry if the gondre mixture seems to float on top; you’ll mix it all together after the rice is cooked.
Step 6
Simply press the ‘Cook’ button on your rice cooker. While the gondre rice is cooking, prepare a delicious dipping sauce to accompany it.
Step 7
While the gondre rice is being cooked in the electric rice cooker, let’s make the accompanying dipping sauce. It will add an extra layer of flavor to your meal.
Step 8
In a small bowl, combine finely chopped green parts of a green onion and chives. Add 1 Tbsp minced garlic, 1 Tbsp gochugaru, 5 Tbsp soy sauce, 2 Tbsp plum extract, and 1 Tbsp sesame oil. Mix well, then sprinkle with 1 Tbsp sesame seeds for a delicious sauce that perfectly complements the gondre rice.
