Gondre Curry Rice: A Unique Blend of Dried Namul and Curry
Experience a special seasoned rice dish where the subtle earthy notes of gondre namul (a type of Korean mountain vegetable) meet the warm, inviting spices of curry. This recipe adds curry powder directly to the rice cooker for a flavorful and hearty meal.
Ingredients- 2 cups Rice
- 8g Dried Gondre (Korean Mountain Vegetable)
- 500ml Water
- 2 Tbsp Curry Powder
- 1 Cumin Seed (optional)
- Scallions, chopped (for garnish)
Cooking Instructions
Step 1
Start by rinsing the rice and any mixed grains thoroughly under cold running water. Continue rinsing until the water runs clear. This step removes excess starch, leading to fluffier and cleaner-tasting rice.
Step 2
Lightly rinse the dried gondre and add it to the rice cooker along with the washed rice. Since the gondre will absorb water, you’ll want to use a bit more water than usual. Measure out approximately 500ml of water to ensure the rice is cooked perfectly. Adjusting the water level is key to achieving the best texture.
Step 3
Now, for the aromatic infusion: add 2 tablespoons of curry powder and 1 cumin seed (if using) to the rice cooker. The cumin seed adds a subtle aromatic layer, but can be omitted if you prefer. Once everything is in, close the lid and select the ‘cook’ or ‘rice’ setting to begin making your flavorful gondre curry rice.
Step 4
The cumin seed is very mild and primarily adds aroma, so feel free to skip it if you’re not a fan. Depending on the brand of curry powder you use, the saltiness can vary. The curry powder I used wasn’t very salty, so I found that increasing the amount or adding a tablespoon or two of soy sauce would be a good way to adjust the seasoning to your preference. Taste and adjust as needed.
Step 5
Wait patiently for the rice cooker to complete its cooking cycle. Your delicious gondre curry rice is almost ready!
Step 6
Once the cooking is finished, open the lid. Gently fluff the rice with a rice paddle, being careful not to mash the grains. This helps to release steam and gives the rice a lighter texture. For a fresh finish, you can either sprinkle the chopped scallions over the rice after fluffing, or add them to the rice cooker before cooking for a softer, infused flavor. Enjoy your aromatic and satisfying gondre curry rice!
